it has cheese and chunks of peppers in them..but im not too sure exactly how to do it...anyone know?

In addition to recipes above, if you can throw the actual jalepeno pepper into the oven (whole, as is) for 20 mins at 300 degrees and allow it to cool, the actual flavors of the pepper will be released.
For any mexican/southwestern dish, it is essential to release this flavor of any pepper by baked (preferrably grilling it) to release to deep smoky natural flavor unlocked from the pepper. I do this when making cornbread or even salsa.
JALAPENO CORNBREAD
3 c. cornbread mix
2 1/2 c. milk
3 eggs, beaten
1 c. drained whole kernel corn
8 sm. jalapenos, chopped
2 1/2 c. grated sharp cheddar cheese
1 lg. onion, chopped
1/2 c. salad oil or bacon grease
In a mixing bowl, mix together cornbread mix, milk and eggs. Add corn, jalapenos, cheese and onion. Heat oil and add to mixture. Pour into 3 (8 inch) pans and bake at 375 degrees for 45 minutes. This is for a large crowd and may be cut down.
Ive never had it with cheese but if you just throw some chopped jalepeno peppers in the regular cornbread mix it comes out mighty tasty. Add some crumbled cheese and your well on your way.
Another thing it might be is adding just crumbled/chopped pepper jack (monterey jack) cheese to the batter.

Ingredients:
1/2 cup mayonnaise
1 can (4 oz. size) chopped green chilies, undrained
2 eggs, beaten
1/2 teaspoon ground red pepper
2 packages (8-1/2 oz. size) corn muffin mix
1 can (11 oz. size) whole kernel corn, drained
1/2 cup chopped red bell pepper
Directions:
Preheat the oven to 400F.
Combine mayo, green chilies, eggs and ground red pepper in a large bowl. Add in remaining ingredients; mix just until moistened.
Pour mixture into a greased 13x9-inch baking pan.
Bake for 25 to 30 minutes or until golden brown.

I buy the box Jiffy Brand mix and follow the directions - adding shredded pepper jack cheese to the batter before baking - simple
its called mexican cornbread. we just make regular corn bread really, and add some chopped jalapeno peppers, ground cajan pepper, and chopped onions

3 cps fine cornmeal - 1 cup all-purpose flour
3 tsp baking powder - 1 tsp baking soda
3 tbsp sugar - 2 tsp salt - 2 cps buttermilk
4 eggs - 1/2 cup melted butter or bacon fat
10 oz cheddar cubed or shredded
1 sm can of corn - 4 jalapenos finely chopped
add chopped red & green peppers for extra color & flavor
* Prehaet oven to 400* , add some baocn fat or oil to the baking pan or dish and stick it in oven so it gets hot...
Combine all wet ingredients in a bowl & all the dry ingredietns in a separate bowl, make sure that all the dry ingredients are well mixed and then add the wet ingredients to it mix well & add the cheese & corn to the mix.
Then pull your pan out of the oven, carefull cause is going to be hot as hell, add your mix to the pan & backl onthe oven for 25 to 35 minutes.

I just either use Jiffy Cornbread mix, or make a batch of corn bread from scratch. Just before pouring the batter into the pan for baking I stir in a handful of shredded cheese and a couple of tablespoons (or more depending on how spicy you want the corn bread) of pickled, sliced (drained) jalapenos.
Spicy Corn Bread
1 cup flour
1 cup cornmeal
1/4 pound shredded cheddar cheese (4 ounces)
1 small finely chopped jalapeno pepper
1 tablespoon chopped green bell peppers
1 tablespoon chopped red bell peppers
1/4 cup Frozen Corn ( optional)
2 teaspoon baking powder
11/2 teaspoon sugar
1/2 teaspoon salt
3/4 cup milk
1 teaspoon crushed red peppers
2 egg
2 tablespoons melted butter
Preheat oven to 350 degrees.
In a large bowl combine the flour, cornmeal, cheese, red and green bell peppers, red crushed pepper, jalapeno, baking powder, sugar and salt.
In a small bowl, whisk together the milk, egg and butter. Add milk mix to the dry ingredients and stir just until moistened. Add Corn and mix well.
Pour into a greased 8-inch square pan and bake for 20 to 25 minutes or until cornbread is nice and brown.
Check by inserting toothpick or knife for doneness, if it comes out clean, then your cornbread is done.
