Answers:
Fried okra and a salad.

Fried Catfish and hush puppies...mmmmmmmmmmmmm.

try spicy shrimp on a bed of spinach.

beans and crab cakes

Jambilaya or however you spell it. You could also have salad with jalapeno slices and balsamic vinegarette dressing

dirty rice is a side dish and a main dish; but you could have some nice, fresh ears of sweet corn, or some fresh green beans, a nice romaine salad or something along those lines-

Usually, dirty rice *IS* a side dish to things like fried chicken, pork chops, white beans w/ ham or sausage, or baked ham.

Just serve yours w/ a veggie and some cornbread.

Are you having a protein in or with this? I would be tempted to boil up some crawfish or shrimp for a protein. A green salad or a zesty slaw would be good. Corn on the cob. Fresh tomatoes sliced and simply dressed. Sauteed or grilled zucchini, onions, peppers, or even eggplant.

I have a suggestion: once rice is cooked by directions, add a large can of chop suey vegetables, a can of baby corn (in water), serve with chow mein noodle and soy sauce, with a couple of dashes of hot sauce. delicious! Eat in a bowl with the noodles and enjoy.

rice

corn fritters
Corn on the cob
shrimp brouchettes
