Sausage and Peppers Recipe.....?

Can someone please provide me with a yummy recipe for sausage and peppers for a crowd of about 40? My niece is having a birthday party this weekend, and I have been elected to bring this dish. I imagine it's not too difficult to make, but I don't want it to be bland, and I need a recipe for a larger crowd. Thanks

Here is what we do when we cook at our cultural club...we're usually 60-80 persons, once every month.


You will need about 1 sausage per person, so:

40 sweet or medium-hot Italian sausages (throw in a few more for good luck), you can leave them whole or cut in half,
3-4 medium Vidalia onions (they are very sweet), sliced thick
4 cloves garlic, chopped in large pieces
4-6 large peppers (use red bell, yellow, orange and green peppers), sliced in about 2-inch wide strips
3-4 large leaves fresh basil chopped (or 1 tsp. dried basil),
4 tablespoons fresh chopped Italian parsley
1 cup white wine (or 1 beer)
salt, freshly ground pepper, olive oil

You can also add:
5-6 large yellow flesh (tastier) potatoes cut in wedges.
a few sprigs of fresh rosemary

I use those large aluminum baking dishes, the kind you throw away, you will need 2. Spray them with some non-stick spray like Pam (or spray vegetable oil) so the food won't stick to the edges of the baking dish. Place the sausages, peppers, potatoes in the baking dish, salt lightly, add pepper and then drizzle with about half a cup of extra virgin olive oil, mix everything up well, add the wine or beer.

Cover the pan with foil and bake the sausages in a 350F. degree oven for about 45 minutes. Uncover and cook for 10-15 more minutes to let the food brown.

Ovens vary, so cook until the sausage is no longer pink and the vegetables are tender.

Sausage and Peppers

Ingredients:
1-2 lb sausage (about 8 links, we prefer sweet, you may use hot)
1 large sweet onion, sliced and chopped
1 large red pepper, sliced and chopped (or any other sweet pepper)
Olive oil
Salt
Pepper
1 loaf Italian bread

Steps:
1. Heat approximately 1 tablespoon of olive oil in a large frying pan.

2. Brown the sausage in the oil until you get a nice color on the outside and you no longer see any "pink".

3. Remove the sausage and drain on a paper towel.

4. Keep the heat going on the pan and add onions and peppers (do not add any additional oil).

5. Cook the onions and peppers approximately 5 minutes or until onions start to become translucent.

6. During this time, slice the sausage down the middle, do not cut all the way through, just enough so you can open the sausage and "fan" them out.

7. Add salt and pepper over the onion/pepper mixture and turn heat down to simmer.

8. Place sausage on top of onions and peppers and cover.

9. Simmer for approximately 15 minutes or until sausage is cooked through.

10. Serve with Italian Bread.

Italian Sausage, Peppers, and Onions [6 servings]

6 (4 ounce) links sweet Italian sausage
2 tablespoons butter
1 yellow onion, sliced
1/2 red onion, sliced
4 cloves garlic, minced
1 large red bell pepper, sliced
1 green bell pepper, sliced
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup white wine

Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice.
Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.

Sausage, Peppers, and Potatoes

1 tablespoon olive oil
1 lb Italian sausage, cut into 2 inch slices
1 large green pepper, cut in strips
1 large red pepper, cut in strips
5 large potatoes, peeled and diced large
1 envelope onion soup mix
1 1/2 cups water

In 12 in.
skillet, heat oil and brown sausage.
Remove from pan.
Add peppers, potatoes, onion mix and water.
Bring to a boil.
Reduce to low and simmer, covered 20 minutes.
Return sausage and simmer another 5 minutes, or until potatoes are done.
