Put your carne asada in a large bowl or clear plastic bag and pour equal parts of orange juice and lemon juice. Throw in some crushed garlic, sliced green onions, some cilantro, and of course some salt. A dash of some tequila wont hurt and will add a nice blue agave flavor. Also don't marinate for a long time since the skirt steak is very thin. about 1 hour in the fridge is good.

DON'T PUT BEER IN YOUR MIX.. the beer will funk your meat.
It's okay to pour beer on the carne asada as it grills but not on the marinade.

Well I just squeeze orange juice onto the meat and cover it with the special carne asada sesoning that you can find at your local Mexican market. Let it marinate for at least an hour for best results. And sometimes I even add beer (Corona) to the mix. Good luck!

after the beef is tender,add sauce,several choices..fresh,skinned tomatoes and chili's in the blender..salsa in the blender..tomato sauce and chili's in the blender you decide how much spice you want.garlic is nice and some people like cilantro..I don't.
