What are some quick recipes that take 30 minutes or less?

My fiance just started a new job and he gets half hour long breaks for lunch in the afternoon. What are some quick recipes that take 30 minutes or less? I want to have his meal prepared when he walks in the door but I don't want to spend all afternoon cooking.


Answers:
I think there are a variety of options, especially ones that require little or no cooking. Here are some ideas I've thought of, but as always, change things around and experiment as you see fit.

1.) Sandwiches- These don't have to be plain "turkey and cheese on white bread" kind of sandwiches. Try different breads, gourmet cheeses and zesty sandwich spreads, such as chipolte mayo (spicy mayo). Also, don't just stop at cold sandwiches. Things like hot ham and cheese, topped with fresh lettuce and tomato. Or monte carlo style sandwiches (these are really good), which involve frying or baking the bread that has been buttered. Or serve sandwiches on different things, such as croissants or biscuits.

2.) Wraps- similar to sandwiches, but with a little twist. Fill a flour tortilla with some of your favorite sandwich fillings, and roll it up.

3.) Salads- This option is so versatile! Try lots of different greens, veggies, meets, cheeses, croutons, and other toppings. Some ideas might be "italian chicken salad"- for this, you will need a couple pieces of skinless, boneless chicken breasts cut into strips, fresh lettuce or spinach, diced or shredded, parmesan cheese, diced tomatoes, some croutons, and some italian dressing. Mix them all together, and serve. Also don't forget things like egg salad, tuna salad, and chicken salad. These things can be serve with crackers.

4.) Pastas- these cook in a matter of a few minutes. Try these combinations: Angel hair pasta, served in a sauce of butter, garlic, basil, fresh pepper, and topped with parmesan cheese. Cook the pasta according to pack. Meanwhile, melt some butter in a frying pan. Add in some garlic and saute. When pasta is done, drain the water, return it to a pot or serving bowl, add in the butter and garlic, then toss to coat. Sprinkle with basil, freshly ground black pepper, and top with cheese. Yum! Another pasta to try is traditional spaghetti, topped with fried ground beef, cheddar cheese, and sour cream. Check your pasta isle for different sauces to try out.

5.) Soups and chowders- these can be very filling. You can buy cans of chunky soups and chowders, or make a simple one on your own from some various ingredients. Try this: Clam chowder- you'll need 4 pieces of bacon, cut up before cooking, a couple of green onion, diced, one 8 ounce can of cream-style corn, 1 can of creamy mushroom soup, 1 soup can of milk, 1 raw potato, cut up, one 6 ounce can of clams in juice. Then, in a saucepan, fry up the bacon till almost crisp. Add in the onion and cook for another minute. Drain the grease. Add in the other ingredients, bring to a boil, reduce heat, cover, and simmer, stirring often, until potatoes are done, about 15 minutes. But for something simpler and faster, I like the idea of buying some cans of sour, and then adding in my own ingredients and spices to make it more filling.

6.) Chili- get a can of black beans, red kidney beans, a can of tomato paste (you can also use tomato sauce or soup if you want more broth), a pound of ground beef, and some yellow or white onion. You'll also need hot sauce, chili powder, red and black pepper. Fry up the meat, drain. Add in the onions, and saute a little more. Add in the beans, tomato paste, and seasonings. Heat well. For better taste, bring to a boil, reduce heat, cover, and simmer for a while. Try adding in other things, like garlic, and other veggies, like corn. Try topping with sour cream and cheese.

7.) Baked potatoes- if you have a microwave, this is super easy. Microwave according to your mic setting, then split the potato open. Have toppings like diced onion, cheese, sour cream, butter, cheese sauce, bacon bits, cooked broccoli, etc.

8.) Tacos or nachos- just fry up some ground beef with taco seasonings, and fill taco shells with meat, lettuce, cheese, sour cream, tomato, onion, olives, or any other toppings you like. Same with nachos, but served over corn chips instead.

9.) French bread pizza- get a loaf of french bread and slice so you have two long pieces. Top with some tomato or pizza sauce (you can even use pasta sauce), your favorite cheese, and favorite toppings. Pop in the over until bread is toasted and cheese is melted.

10.) Take a break! You might not feel like cooking something every day, even if it's simple, I know I sure don't always feel up to it. So take a break and pick up something already made from your deli. Also try some frozen foods, such as pizzas or various kinds of frozen entrees, like fried chicken, Salisbury steak, etc.

Spaghetti Ala Bolognese

INGREDIENTS
1 pound lean ground beef
1/2 pound sausage
1/2 medium onion, chopped
1 cup milk
3/4 cup Holland House? Red Cooking Wine
3 beef bouillon cubes
1 (28 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 pound spaghetti, cooked

DIRECTIONS
Chop ground beef and sausage until well minced. Cook onion, beef and sausage in a larger skillet over medium heat until pink is gone, about 6 minutes.
Add milk and simmer until almost evaporated, about 4 minutes.
Add red cooking wine and beef bouillon. Simmer about 4 minutes.
Add canned tomatoes and tomato paste. Simmer about 15-20 minutes until sauce is thick. Serve with cooked spaghetti.

Rachael Ray is a chef who take 30 minutes to make all her meals. I would advise you to plan to take 45 Minutes though because you need 15 minutes to get your ingredients and your water boiling etc. just to get your ingr
