6 cups peanut oil
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten

Using a deep pot, preheat oil for frying to 350 degrees F.
Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process.

Baked Hush Puppies:

30 min 15 min prep
6 hush puppies

1/2 cup yellow cornmeal
1/2 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon sugar
1 pinch chili powder
1/4 cup onions, chopped
1 egg, beaten
1/3 cup milk
2 tablespoons lite olive oil

1. Heat oven to 425F degrees.
2. Spray of small muffin tin with veggie oil.
3. Mix dry ingredients.
4. Stir in onion.
5. Mix egg, milk& olive oil, beat well.
6. Add to cornmeat mixture and stir gently until just blended.
7. Spoon batter into muffin tins fill 1/2 to 2/3 full.
8. Bake until golden, about 15-20 minutes.
9. Serve immediately.
