What is a good vinegar to use with olive oil (to make a yummy salad dressing).?


Answers:
use a basalmic vinegar...add 1 egg yolk and some minced and roasted garlic, bell pepper and shallots. add 1 teaspoon of dry mustard and some pulverized, fresh herbs of your choosing. add some red wine and a touch of honey and soy sauce.
mix this in a blender slowly adding the virgin olive oil...the emulsification should be thick and creamy. use 2 parts oil to 1 part vinegar/mix.
you will be famous!

balsamic vinegar

Balsamic. I just made a batch yesterday. It has olive oil, garlic, lemon juice and rind, and Dijon. It's really good.

Red Wine Vinegar

OLIVE OIL SALAD DRESSING

2 c. olive oil
1/2 tsp. parsley, chopped fine
3 lg. cloves fresh garlic, crushed
1/4 c. fresh lemon juice
1/4 c. tarragon vinegar
1/4 c. wine vinegar
2 tsp. monosodium glutamate
1 1/2 teaspoons salt
1/2 tsp. garlic salt
Dash of black pepper
2 tsp. dry mustard
1 tsp. dill weed
1/4 tsp. garlic powder

Mix all ingredients together in a jar, mixing well. Let stand to season at least 2 hours before using. Keeps well in refrigerator. This dressing is good on a salad used in pita bread or wrapped in thin flat bread.

Wine vinegar, white or red, works very well too.
