Chicken Enchilada Skillet

? 1 tablespoon oil
? 1 lb. boneless skinless chicken breasts, cut bite-sized
? 1 14.5 oz. can chicken broth
? 1/4 cup ranch dressing
? 2 tablespoons flour
? 6 flour tortillas, cut into small pieces
? 1 cup shredded four cheese
? 1/2 cup salsa

? Heat oil in large deep skillet on medium-high heat. Add chicken; cook 7 minutes or until cooked through; stirring occasionally.
? Mix broth, dressing and flour until well blended; gradually add to chicken, stirring constantly. Bring to boil. Reduce heat to medium-low; simmer 3 minutes. Add tortillas; stir to combine.
? Sprinkle with cheese; cover. Simmer 3 to 5 minutes or until cheese is melted. Top with salsa.

There are no set measurements for this, it's pretty much how you like it.

Using a large pan, brown 1 or 2 pounds of hamburger with diced onions and celery. Drain. Add one large bag of frozen corn (if you like get it with peppers and pimentos added), 1 jar of picante sauce, and 1 large can of crushed tomatoes. Simmer until the corn it hot.

Serve it in bowls. Have bowls with nacho cheese, chopped scallions or green onions, picante sauce, sour creme, and shredded cheese for garnishes. You could even use crumbled bacon.

depending on the number of people. here is something healthy and that does not require too much prep. chicken breasts that are clean. in a bowl put some vege oil, fresh crushed garlic, paprika, salt + pepper. cook in a tefal pan. put about a tablespoon or so of vege oil on the bottom. cook.
also make salad, or some vegetables.
for a quick easy salad
letuce, tomatoes, (onions, cucumbers, and carrots, Optional)
you can add any vegetables in the salad.
olive oil and some vegetable oil
salt
pepper
crushed fresh garlic
fresh lemon
toss

steam vegetables

1/2 teaspoon thyme then you put the chicken on a pan and you
mix all the other ingrediates in a small bowl
and when mixed and done and put it on the chicken
and you cook the chicken on 350 for about
30-40 minutes! ENJOY!

Here is a great dish and very easy to make. A great appetizer is Caesar Salad. (made this from scratch so I don't have exact measurements, I go by sight)

Mediterranean Pasta Dish

1 box rotini pasta
1 can small artichoke hearts
1 small can of black olives
1/2 small jar of green olives
shredded Parmesan cheese
1 large bottle vinaigrette salad dressing (i use wishbone red wine vinaigrette.)

Follow directions on box of pasta to cook rotini. While waiting for the water to boil, in a separate dish drain artichokes but leaving just a little of the liquid in dish and heat up in microwave (or heat on stove until warm) for 30 seconds. Drain black olives and put in a different dish. Add green olives (don't worry about draining) to same dish. Heat in microwave for 30 seconds.

Put pasta in a serving dish (on that can be covered and go in refridge.) Drain artichokes and put into pasta. Then add olives to pasta. Mix. Now add vinaigrette (about half of the taller bottles). Make sure you taste test to get the vinaigrette to your liking. Then add Parmesan to liking. Mix and serve.

This dish is also great cold.
