Anyone have a good recipe with sweet potatoes and chicken?

I am trying to come up with dinner, and I want to use both of these ingredients... together if possible. Any ideas?

I've made this a few times and it is DELISH - and healthy too!

Glazed Chicken with Maple-Orange Sweet Potatoes
Serves 4

3 sweet potatoes (about 2 pounds), peeled and cubed
2 tsp olive oil
4 four oz skinless, boneless chicken breast halves, pounded to 1/2 inch thickness
Salt and ground black pepper, to taste
1/4 cup orange juice
1/4 cup maple syrup
2 tbsp light brown sugar
1/8 tsp ground cloves

Place peeled and cubed sweet potatoes in a large saucepan and add enough water to cover. Set pan over high heat and bring to a boil, cook 3 minutes, drain and set aside.

Heat oil in a large, high sided skillet over medium-high heat. season both sides of chicken with salt and pepper. Add chicken to hot pan and cook 1 minute per side, until golden brown.

Whisk together orange juice, maple syrup, brown sugar and cloves. Pour mixture over chicken. Arrange sweet potatoes around chicken in pan.

Cook 10 minutes, uncovered, until chicken is cooked through, sweet potatoes are tender and maple-orange sauce is thick and bubbly.

Per Serving (1 chicken breast half, 1 cup sweet potatoes)

Personally,I do not like them together,but my daughter made a dish with them the other night & it was fair.
She just peeled & chunked the sweet potatoes & baked them in the roaster with the chicken,in a light seasoning.
Yams go with ham or pork in a sweet glaze,if you ask me!

Bake the potatoes in a medium-hot oven for 1 - 1 1/2 hours depending on their size. Cut chicken into bite size pieces and marinate in jerk seasoning (add oil to the powder so it coats the chicken). Fry a chopped onion in a little oil, then add the chicken until it's sealed. Pour in enough water to just cover the chicken and simmer for about 20 minutes until the chicken is cooked and the sauce had reduced. Thicken further by adding creamed coconut. This is delicious with the roasted sweet potatoes.

If you have a whole chicken or just chicken pieces, clean your chicken and salt and pepper it well, put it in a heavy pot (one that can go into the oven). I like to drizzle olive oil on my chicken or corn oil, or spray with non-stick cooking spray. Then peel your sweet potatoes and place them all around your chicken in the pot. I put russet potatoes too and even peeled carrots if I have them. Bake covered for about 40 minutes at 350 and then remove cover and bake for an additional 1/2 hour or until chicken is cooked. You can spoon out your potatoes and put a little butter on them and for an extra treat you can add a little cinnamon and sugar. This is so good.

Roasted Chicken and sweet potatoes

Ingredients:
1 pound sweet potatoes, peeled and thinly sliced
4 bone-in chicken breast halves
1 can whole berry or jellied cranberry sauce
1/4 cup olive and vegetable oil
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground black pepper


Directions:

Preheat oven to 375 degrees F.

Rinse potatoes; pat dry. Place potatoes evenly in a 13x9 inch baking pan. Place chicken on top. Whisk remaining ingredients together in a medium mixing bowl. Pour mixture over chicken and potatoes. Bake, uncovered, 50 minutes or until chicken is cooked throughout and potatoes are tender.

HONEY-BAKED CHICKEN AND SWEET POTATOES

1 (3 lb.) broiler-fryer chicken, quartered or 3 chicken breast
1 (1 lb.) can sweet potatoes, drained
1/4 c. bottled clear French dressing
1/4 c. honey
1/4 tsp. dried tarragon leaves
Salt and pepper to taste

Heat oven to 375 degrees F. Sprinkle chicken with salt and pepper to taste. Place chicken skin side down in a lightly buttered, shallow, 3 quart rectangular baking dish.
Mix together honey, French dressing and tarragon. Brush chicken lightly with some of the mixture. Bake 30 minutes, brushing occasionally. Turn chicken skin side up and brush lightly with honey mixture. Bake 10 minutes longer.

Add sweet potatoes and bake 10 to 15 minutes longer, brushing chicken and potatoes occasionally with remaining honey mixture. Serve with pan juices. Serves 4. Prep time 15 minutes, baking time 55 minutes.

I will give a recipe in India's style. Grind garlic, ginger and tomatoes and red onions(or any other kind, red has more sweetness) for one fistful of garllic use an inch of garlic. Marignate thorougholy washed chiken in turmeric, red chillie powder and plain yoghurt. Keep aside for at least half an hour. Take a dish and a quarter cup of oil in a pan and heat it , add the ground mixter to it and fry for 3 minutes or untill the raw smell goes away You can also add curry powder if you have toi it. Buy a non spice one if you do not like spice and do not marignate with chillie powder if you do not like it spicy. then add the chicken to it and add water enough to boil the chicken(I thinkg you will need very little water may be a cup ,you need a thick gravy or add more if it is less) When the chicken is half done add boiled sweet potatoes to it. cook untill the chicken is done .

This will be good with coconut milk rice, plain rice, breads ,buns and rotis, dosas, idlis from India
P.S. Chillie powder will give you red color
