There's a great recipe for homemade cranberry sauce in The Joy of Cooking:
The Joy of Cooking Cranberry
INGREDIENTS
? 1 pound cranberries, picked over and washed
? 1 1/2 cups sugar
? 1/2 cup water
? 1/2 cup orange juice
? 2 tablespoons grated orange zest
DIRECTIONS
Cook, uncovered, over medium heat until most of the cranberries pop open and the mixture is somewhat thickened, about 7 to 10 minutes. If desired, add 1/2 cup blanched almonds, slivered.
Let cool and serve or refrigerate for up to one day.
My mom simply boils cranberries in a pot until the desired consistency is reached. Sugar is added, but again, itsdependant on how sweet you like it, as well as how sour the batch of berries are. Keep the heat at a medium level, rather than blazing high because the some of the berries are going to burst.
The best recipe is on the back of the cranberry package and it is very simple.
All you do is boil 1 cup of water with 1 cup of sugar. Once boiling, add the cranberries.
Boil gently for about 5 - 7 minutes. Let stand for about 25 minutes, then refrigerate.
The problem is trying to find fresh cranberries now - they are usually only available near Thanksgiving. Look for frozen bags (Ocean Spray). I usually buy extra bags and keep frozen all year.
INGREDIENTS
1 (12 ounce) package fresh cranberries
1 1/2 cups water
1/2 cup white sugar
1/2 cup packed brown sugar
DIRECTIONS
Place cranberries in a bowl of clean water. Pick through, discarding stems and rotten berries. Drain berries.
In a medium saucepan, combine berries, 1 1/2 cups water, and sugars. Cook over high heat, and let come to a boil. Boil, uncovered, for 5 minutes. Spoon off any foam that forms. Serve hot or cold.
