Philadelphia roll is the best one I've tried so far. It's not the usual cold sushi but instead it's a sushi with salmon and cream cheese filling, the roll covered in tempura batter and fried. Instead of wasabi + soy sauce dip, this roll is dipped in japanese mayo with a mild teriyaki sauce( I think). So when you bite into it, it's a mixture of hot and cold sushi. Yummeh!

I'm a HUGE fan of any type of eel roll. I know it sounds disgusting, but they put this delicious sauce on the eel, and the cooked eel is very light and airy. I expecially like it when the eel is paired with shrimp temperua, avocado, cucumber, tobiko, and crab meat. There really is no particular name that I know of for that roll, it's different in every restraunt I go to.

Also, I really like this roll called the dynamite roll. It's spicy shrimp along with avocado and cucumber, and it's great when you want something really fresh.

Finally, the spider roll is also delicious. It's fried soft shell crab in a roll, and the taste is superb.

spicey tuna is really good.

Volcano roll. It's covered in a creamy red hot sauce lava!

I also had this "Chef's Special" at a little sushi place in Dallas. There was shredded crab meat soaked in a light sauce and instead of seaweed it was wrapped in super thin cucumber slices.
