Cocktails in Rome?!

Question:

Cocktails in Rome?

While watching a travel programme about Rome sometime ago, I heard the presneter talk about a cocktail made of peaches and sparkling wine which can only be served in one particular bar. What is this drink called and what is the name of the pub?

Answers:
I lived in a hotel in Rome for 6 Months called the Massimo D'Azeglio on Via Cavour.

Go in there to the bar, ask for Giuliano and tell him that Mr Sullivan told you to ask him for the best Bellini in Rome.

I am not sure about Rome but this is a famous cocktail is made with champagne/sparkling wine and ripe peaches xxx.

This famous luxurious cocktail was invented at Harry's Bar, Venice, in 1934.

Bellini cocktail

Ingredients

2 ripe peaches, peeled, halved and stone removed, or the equivalent using tinned peaches in natural juice
Chilled champagne or sparkling wine
2 chilled champagne glasses

Method
1. Place the peaches in a small blender and purée until totally smooth. This can be done well in advance and kept in the fridge. Spoon half into the chilled champagne glasses and slowly top up with champagne, stirring as you pour. You should ideally have one third peach purée to two thirds champagne.
