Answers:
Im guessing you want the batter for the sausage on a stick
You could use this recipe if thats the case just substitue the hot dogs for your favorite sausage.
CORN DOGS

2/3 c. corn meal
1 1/2 tsp. baking powder
2 tbsp. sugar
2 tbsp. oil
1 lb. hot dogs
1 c. flour
1 tsp. salt
3/4 c. milk
1 egg, slightly beaten
8 sticks

Mix corn meal, flour, baking powder, salt and sugar. Add milk and cooking oil, mix well. Add egg. Dry hot dogs; insert sticks and dip in corn dog mixture. Cook in hot oil at 365 degrees until golden brown.

CORN DOG BATTER

6 c. cornmeal
3 c. plain flour
2 1/2 tsp. soda
1 1/2 tsp. salt
2 tbsp. sugar
3 c. buttermilk
2 1/2 c. water
2 eggs

In large mixing bowl mix all dry ingredients. Add buttermilk and water. Beat in eggs and mix well. If batter gets stiff add small amount of water. Roll prepared weiner in batter and fry in deep hot oil until browned.
To prepare corn dog, use wieners right out of the package; insert stick and coat wiener by rolling it in the batter. Hold on to stick. Leftover batter may be kept a few days in the refrigerator. Can be made into cornbread by adding a little more liquid.

SKILLET CORNBREAD

1 egg
1 1/2 c. milk
2 c. Aunt Jemima self-rising white corn meal mix
Cooking oil

Stir together egg, milk and cornbread mix. Pour cooking oil in skillet to fill or cover bottom of skillet about 1 cup. Heat skillet on top of cooking stove. Spoon cornbread mix in skillet. Cook on top of skillet until brown; turn over and brown on other side using spatula, cooking 4 at a time. Makes about 8-10.
