Recipe for vegetarian gravy?

Does anyone have any ideas on how to make a good vegetarian gravy? I love mash potatoes with gravy but the gravy always has some kind of meat in it. Thanks!

This is the recipe I use the most often:

Vegetarian Gravy

3 Tbsp. olive oil or melted margarine
3 Tbsp. flour
2 1/2 cups water or vegetable stock
3 Tbsp. dark soy sauce
salt and pepper to taste


? Heat the oil in a saucepan and add the flour. Stir over moderate heat for a few minutes until the flour turns brown.
? Pour in the water or stock and stir slightly until thickened. Simmer for 10 minutes, then add the soy sauce and a little seasoning to taste, if desired.

Many health food stores carry vegetarian gravy. You can also make it with vegetable stock and corn starch.

INGREDIENTS
1/2 cup vegetable oil
1/3 cup chopped onion
5 cloves garlic, minced
1/2 cup all-purpose flour
4 teaspoons nutritional yeast
4 tablespoons light soy sauce
2 cups vegetable broth
1/2 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper
DIRECTIONS
Heat oil in a medium saucepan over medium heat. Saute onion and garlic until soft and translucent, about 5 minutes. Stir in flour, nutritional yeast, and soy sauce to form a smooth paste. Gradually whisk in the broth. Season with sage, salt, and pepper. Bring to a boil. Reduce heat, and simmer, stirring constantly, for 8 to 10 minutes, or until thickened.

OR

1 T butter
1/4 C minced onion
3 cloves minced garlic
4 T flour or whole wheat flour
4 C water or vegetable stock 5 T low sodium or light soy sauce
2 tsp. minced parsley
pepper to taste
Makes About 4 1/2 Cups
Melt butter in a heavy skillet and sauteé onion and garlic for about 2 minutes. Transfer to a bowl and wipe skillet clean. Add flour to skillet and cook, stirring constantly until flour get brown and toasted. Add water or stock and soy sauce and cook, whisking constantly until mixture comes to a boil and thickens, about 5 minutes. Stir in onion/garlic mixture and parsley. Cook for one minute more. If gravy becomes to thick, thin with additional water

INGREDIENTS:

1 small yellow or white onion, minced
1/4 cup vegan margarine
2 1/2 cups vegetable broth
2 tbsp soy sauce
1/4 cup flour
1 tbsp poultry seasoning (or 1/2 tsp each of sage,thyme and marjoram)
salt and pepper to taste

I make veggie stock by boiling potato peelings (well scrubbed) and a variety of veggies, such as pearl onion, scallions, aspargus stems, red and green cabbage, and trimmings from zuchini, carrots, celery, parsley and whatever other veggie scraps you have on hand. I just thicken the stock with a little tapioca flour or cornstarch (you can use regular flour, I am allergic to wheat) and season with salt and pepper to make a good gravy. There are also vegetarian gravy mixes available at most health food stores. I make one of them for my veggie daughter that smells and looks just like tradition brown gravy-my daughter says it tastes the same. There is also a chicken flavored one, but she doesnt like chicken so we have not tried it.

If you like cream gravy, you can make it with a nut milk or plain soy or rice milk. I don't know if they make a cashew milk, but that would make wonderful cream gravy. I love peppered cashews because they taste so much like the cream gravy my mom use to make.

I usually buy Hain's gravy packets to get beef or chicken flavored gravy. It's really easy to make from the packet.

1.Take four cups of water and boil it
2. Add 4 tablespoon flour
3. Add 1 teaspoon ginger and half teaspoon garloc
4. Add a little salt and a sprinkle of sugar
5. Add the BBQ sauce (I think there is no meat in that but if there is then add tomato puree)
6. Add some onion powder and cheese in the gravy.
7. Add water to adjust thickness.
8. Add chilli powder/pepper to make it spicy (if you want)

Saute some onions and garlic and celery, maybe some diced carrots, in butter and EVOO. Salt and pepper, add some herbs de provence or other dry herbs you like. Get a good brown colorn on your pan. Add some white wine, veggie stock, and/or wter. Stir to deglaze pan. Let simmer, stirring occasinally, and let the fluid reduce in volume by half. Starin. Return liquid to pan, bring to a boil, and whisk in some "Wondra" flour (blue can, flour aisle) until thick, or flour mixed w/ water itno a thick slurry. Either way, boil 1 minute to thicken, then remove from heat. Try to enjoy w/o meat on your plate! ;-)

No clue unless you use mashed carrots and other vegs as a gravy. A lot of people add butter, milk and cheese... but of course they are not on a vegetarian's menu.
