I still have some corn on the cop in the fridge.....?

.... what else would you serve with it???
I'd like to make it for dinner tonight!!!

Ooooo, that sounds good! Try grilling it with a little fruit salsa. Wrap the corn in aluminum foil. Before sealing the foil, put a little bit of olive oil and oregano/garlic/pepper/whatever spices you like. Seal the edges (just twist it), and grill it for a little while (about 20 min, I think...depends on your grill).
For the fruit salsa, peel and cube peaches, papaya, mango, and pineapple, and mix it together. Put a little cilantro and mint in there. Mix 1 part lemon juice to 2 parts simple syrup (sugar water). Pour this over the fruit, and let it sit in the fridge until dinner.
Serve the corn with a big, juicy hamburger and homemade french fries (Oreida is a good brand).
After dinner, scoop some French Vanilla ice cream into bowls. Spoon a little of the salsa over that.

Or, if you want another delicious dessert, try grilled peaches. Cut the peaches in half and remove the pit. Dip the cut end first in lemon juice, then sugar. Don't bother with the other side. Cook the peaches right on the grill until they have nice grill marks and are warm. Serve over ice cream.

you could always cut the corn of the cob, and have tuna mornay, (tuna, milk, cheese, flour, mustard, corn, curry powder) and have that on rice or pasta, or you could make corn fritters or omlets.. or fried rice with corn & peas & onion..

Steam them and serve with potato mash, peas and carrots, sausages? steak.......:)

i didnt know corn came on the cop but u better take the corn off the cop and the cop outta the fridge or ull get arressted

As for the corn, you can slice it off and sauté it in a little butter with chopped red peppers and maybe some sliced green onion as a side dish. Yummy!

You can always fix Mexi-Corn. Basically its just your corn. And had some peppers (green and red) and add a can of Rotel (diced tomatoes and chilies).

Green Chili Enchiladas
1 lb ground beef
1 teaspoon salt
1/4 teaspoon garlic powder
1/2 lb longhorn cheese, grated
1 cup onions, chopped
1 dozen flour tortillas
1 (10 1/2 ounce) can cream of chicken soup
3/4 cup evaporated milk
1/2 lb processed cheese, grated
1 (1 ounce) package green onion dip mix
1 (4 ounce) can green chilies, chopped
1 (2 ounce) jar pimientos, chopped


1. Brown ground meat with salt and garlic powder in skillet, stirring frequently.
2. Add longhorn cheese and onion, mixing well.
3. Spoon ground beef mixture onto tortillas, roll tightly to enclose filling.
4. Place in buttered 8 x 10-inch baking dish.
5. Heat soup, evaporated milk and process cheese in saucepan until cheese melts, stirring constantly.
6. Add dip mix, chilies and pimento, mixing well.
7. Pour cheese sauce over enchiladas.
8. Bake covered, at 350 degrees for 30 minutes.

Serve corn as a side.
