You really need to do your research and make sure you have the time, some frends to help you, and all of the stuff (chicken wire, volcanic rock, etc)you're gonna need to do this right before you do it. I was considering doing it myself and found this website that laid out all the instructions to do a real Hawaiian pig roast. The link is below. Be prepared - it will take about 10 hours. The alternative to this which is easier and tastes great is to roast it over an open pit, which I do with lamb every Easter.

well first...if you can't find a Hawaiian pig use a North american one....

I don't know about Hawiian style but, I can tell you how we do it in South Carolina. First, You need a pit and a rack that will hold the pig. The rack should be able to be raised and lowered and also rotate or flip. Dig a hole for your fire that the rack will fit over. I hope you have alot of time because it will take most of the night before and a good part of the next day. You need to cook it slow. Wood that you use will also determine the flavor of the meat. Use a good basting sause. The meat should pull off the bone when done. Good luck . I hope this helped.

I think you are supposed to dig the hole. line in hot coals, place bannana leaves, then the pig, more leaves, and cover somehow. But I also saw on TV there is a way around the hole. It's something called the "caja china" (chinese box) that makes it easier to do and can be done above ground.
