Boiled lamb's head, traditionally served at Christmas. The brain is removed, and the head salted and dried before boiling. Because they're the fattiest bits, the ear and eye are eaten first. More fun than a wishbone.

Probably, but it's not something I'd tried before. This year I had a meal with the family that lives upstairs that was something like this - except it was the whole head of a baby pig - a lot of fat and crispy skin. This is one that I'd just as soon not have again unless it was to be polite.
