well there is no healthy donuts but here is a recipe for mini vegan donuts:

Mini Baked Donuts
Make 20 Donuts

Dry Ingredients:
1 Cup All Purpose Flour
1/2 Cup Sugar
1 1/2 tsp Baking Powder
1/4 tsp Salt
1/4 tsp (scant) Nutmeg
1 tiny pinch or shake Cinnamon

Wet Ingredients:
1/2 Cup Soymilk
1/2 tsp Apple Cider Vinegar
1/2 tsp Pure Vanilla Extract
Egg Replacer for 1 Egg
4 Tbs Earth Balance

Preheat oven to 350o F

In a large bowl, combine dry ingredients with a whisk to mix thoroughly. Combine wet ingredients in a small sauce pan over medium low heat and mix until earth balance is melted. This mixture should NOT get too hot, you should be able to stick your finger in the mixture. It should feel slightly warm. If you burn yourself, 1) it’s not my fault! and 2) it’s too hot for the dough!

Add wet to dry and mix until just combined. It should form a very soft dough
Using a tablespoon measure, scoop out dough into your ungreased nonstick mini-donut pan. Smooth out the top of the dough with your fingers, this will make for more even, prettier donuts, but isn’t crucial.

Bake for 12 minutes. They should not be browned on top, but a tester will come out clean. Invert hot pan over a cutting board or cooling rack to release donuts. Allow to cool completely before decorating.

Time for toppings!

Glaze with Sprinkles
1/2 Cup Powdered Sugar (lump free!)
1 Tbs Soymilk
Bowl full of sprinkles (1/4 to 1/2 cup, ish?)

Whisk soymilk and powdered sugar together. Dip the “bottom” half of the donut (the side with the nicer shape) into the glaze, let some drip off, then dip glaze-side down into sprinkles. Transfer to a wire rack that has been set on top of some parchment paper. The excess glaze will drip through the rack onto the paper for easy cleaning later.

Healthy donuts? There's no such thing, otherwise they wouldn't be donuts.

You take away the glaze, and then you take out the dough and shortening. After that, the flour must also go.

Healthy donuts do not exist. And who wants a donut made out of vegetables anyway?

Well, even if donuts can't be HEALTHY (or healthFUL as someone pointed out the other day) you can do some things to make them better for you. For example...
-use organic whole wheat flour!
-replace a bit less than a quarter of the flour with flaxseed meal!
-I second the use of a nonstick donut pan. I have TWO of them and they make awesome donuts out of pretty much any cake recipe you want (mmm zucchini bread donuts just flashed through my mind, with a sweet Tofutti cream uncheese frosting - OH! Or carrot cake...yummy!).
-top them with just a bit of icing and then dip them in crushed, raw, NUTS!

you can veganize this recipe with soymilk, Ener-G for the eggs and vegan sugar substitutes probably..

Copycat of Krispy Kreme Donuts

2 Packages Yeast
1/4 Cup Warm water (105-115 degrees)
1-1/2 Cups Lukewarm milk (scalded

1/2 Cup Sugar
1 Teaspoon Salt
2 Eggs
1/3 Cup Shortening
5 Cups All-purpose flour
Vegetable oil

Creamy Glaze:
1/3 Cup Butter
2 Cups Powdered sugar
1-1/2 Teaspoons Vanilla
6 Tablespoons Hot water

Dissolve yeast in warm water in 2 1/2-quart bowl. Add milk, salt, eggs, shortening, sugar and 2 cups flour. Beat on low speed scraping bowl constantly, 30 seconds. Beat on medium speed scraping bowl occasionally, 2 minutes. Stir in remaining flour until smooth. Cover and let rise in warm place, until double, 50-60 minutes. (Dough is ready when indentation remains when touched.) Turn dough onto floured surface; roll around lightly to coat with flour. Gently roll dough 1/2-inch thick with floured rolling pin. Cut with floured doughnut cutter. Cover and let rise until double, 30-40 minutes.

Heat vegetable oil in deep fryer to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts as they rise to the surface. Fry until golden brown, about 1 minute on each side. Remove carefully from oil (do not prick surface); drain. Dip the doughnuts into creamy glaze set on rack then when slightly cooled spread chocolate glaze on top. Can dip in sprinkles or other toppings after chocolate if desired.

Creamy Glaze: Heat butter until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water, 1 tablespoon at a time, until desired consistency.

Chocolate glaze: 1/3 cup butter 2 cups powdered sugar 1 1/2 tsp. vanilla 4-6 Tbsp. hot water 4-oz milk chocolate or semi-sweet chips

Heat butter and chocolate over low heat until chocolate is melted; remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water 1 tablespoon at a time, until desired consistency.
