Picnic Ideas!!!?

Hey everyone!! :D I need you help! I'm having a picnic tomorrow with my girlfriend but I need your ideas on what to cook! I have like 2 hours to prepare, so I need something easy but nice. The picnic will be at 11 am, it can't be something really heavy like meat or so...
Any ideas???

Make some egg salad or tuna salad or turkey sandwiches, or cheese and salami and crackers, maybe some carrots and/or celery for crunchy, chips, fresh fruit, bottled water (to drink or use for cleaning up), some delicious chocolates, and some sort of beverage. Don't forget utensils, glasses and napkins ;)

Have fun!

1. Turkey sandwich (or make it to a sandwich platter with different types of sandwich like, tuna, turkey, roast beef, pepperoni etc. )
2. Chip and dip
3. some chocolate marbel cake or carrot cake
4. Cheese slices

I have done this before, cook chicken ahead of time and serve it cold. Add a side salad like potato, fruit or pasta, a few rolls and lemonade. Dessert could be brownies, cookies or lemon bars. Yum. What a good BF you are.

CHICKEN AND BEAN SALAD

2 cups cooked chicken, shredded
1 can cannellini beans
1/4 cup green onions, sliced
1/3 cup miracle whip salad dressing
1 tablespoon soy sauce
1 teaspoon freshly grated ginger
2 teaspoons rice vinegar
1/4 teaspoon dijon mustard
2 garlic cloves, minced
1/2 red onion, sliced thinly
1/8 teaspoon cayenne pepper (pinch)
lettuce leaves

Combine chicken, beans, onions, in a salad bowl.
In a small bowl or blender, combine ginger, soy sauce, vinegar, mustard, garlic, and mayonnaise; blend.

Toss with chicken mixture and serve over lettuce leaves.


FRUIT CRUMBLE

Fruit:

1 lb. (455 g) fruit, washed and prepared
3 tbsp. sugar

Place fruit and sugar in a oven proof container.

Crumble:

1 3/4 c. (225 g) plain flour
1/2 c. (115 g) butter
1/2 c. (90 g) sugar
pinch of salt

Place crumble ingredients in the food processor. Blend to resemble bread crumbs. Sprinkle onto top of fruit.
Bake in 390 F (200 Celsius) oven for 1/2 hour or until brown on top.

Serve with cream or ice cream.

GRAMMA'S BAKED BEANS CASSEROLE

3 big cans Bush's Original Baked Beans
1 package of hot dogs
1 package of kielbasa
6 slices bacon
1 small onion, diced

Preheat oven to 375°F. Pour beans into a Dutch oven.
Slice hot dogs, kielbasa and bacon into bite-sized pieces and dice onion. Add everything to beans and mix.

Cover and bake for 45 minutes.

Uncover, mix, and bake an additional 15 minutes or until onions are tender.

Taste and adjust seasonings. Season with salt, pepper, ketchup, or garlic or onion powder, as desired.

Great for potlucks and barbecues.

Don't cook. make sandwiches, fruit salad, cheese and crackers, sparkling cider would add a nice touch. Hope this helps. Have fun.

Corn Salad, simple and delicious! Take 2 cans of whole kernel corn, drain well, add 1 diced sweet onion, 2-3 medium, seeded and diced fresh tomatoes. 2-3 Tbsp mayonnaise (that's all you'll need) season with salt and pepper. I add dried parsley for color. If you want to stretch it further add a can of drained and rinsed black beans and a tbsp of lime juice for a southwestern flair, replace the parsley
with cilantro. Pasta salad is a good addition without the worry of mayonnaise. A muffeletta type sandwich would be good, too. Instead of a round loaf, use a crusty loaf of Italian bread. Just pile on the cold cuts, sliced cheese, roasted peppers, tomato slices and drizzle with a vinaigrette. Put the top on and wrap tightly with saran wrap. These are good to make for a sandwich option because the longer it sets, the better it tastes. Good luck and have lots of fun!

What a lovely idea! In my opinion, the Simpler the Picnic the better. You will be much more relaxed. Keep the produce in its original wrappers so it stays fresh.

Small packet of Sliced Smoked Salmon or Local Ham Sliced
Fresh Bread from the Local Bakery & butter
Grapes
2 Apples

Strawberries
Small tub of cream for dipping
Sweetner/Sugar

Bottle of light sparkling wine 2 glasses
Bottle of sparkling water

Dont forget: Cruet
2 bowls and 3 plates
Cutlery
Bottle Opener
Table Cloth
Sharp Knife
A bottle of frozen water to keep picnic cold
Tiny vase to put wild flowers in
