Why are taco truck tacos so juicy?!

Why are taco truck tacos so juicy?

This lady at this taco truck makes the juciest carnitas tacos. What does she add to them besides the salsa and lime? Also how does she make the tortillas kinda crunchy?

because there meat is fresher and they cook it when you order it. it also has to do with how they marinate them. juts dont buy them off lunch truck cause there meat is stale and when you order them they just reheat it and serve them to you.

Well she probably fried the tortilla a little bit first and they are juicy because when the meat is being cooked it actually starts evaporating the water it is added at first along with salt.

dammit, you made me hungry, haven't purchased tacos from a truck since i lived in California 4 years ago!

Carnitas is deep fried pork. But like edgar said in his post its the way they make them. Excellent carnitas are golden brown & crispy on the outside and tender & juicy on the inside. She probably lightly coats oil on the tortillas then heats them up on the grill and lets them fry a little bit.
