How is cottage cheese made?!

Question:

How is cottage cheese made?

Answers:
Cream is separated from milk. The cream is left out at room temperature for about 3 days. The cream turns to curds and cheesecloth is used to separate the curds from the water. The curds are then mixed with a little more cream and wa-la you have cottage cheese.

good question

the scarier aspect is...how did they know they were done?
