I've seen that before, and wondered to myself, 'why did they feel the need to put that there?'

ea stands for each. In this case, it means 6 individual eggs. Why they felt the need to expound on this with regard to eggs I have no idea.

I believe it is the abreviation for each as in 6 each eggs, I know it doesn't seem to make much sence but I have seen it in cookbooks before and I suspect it has something to do with translating from some other language into English.
