How to make a homemade apple pie without canned ingredients?

I live in Germany, and want to make an apple pie, but do not have access to any fillers-I guess it is the canned ingredients that you would use. Does anyone have a receipe to share that doesn′t require these canned ingredients?


Answers:
I use 2-3 pounds of granny smith apples, but any tart apples will do. Peel them, core them and slice them thinly, no more than (crap, you people are metric) 1cm wide. Toss them with enough cinnamon and white sugar to coat them, the excess with sift to the bottom, um......2/3 cup sugar, 1 tablespoon cinn, 1 teaspoon nutmeg, dash of salt, 1/4 cup flour, mix these in a bowl FIRST, then add them to apples. toss to coat. Layer apples in pie shell. Dot apples with 1 tablespoon butter cut into pieces, cover with top shell, seal edges, cut slits in top, sprinkle a little sugar and cinnamon on top last 10 mins of baking. Cover edges of pie with aluminum foil to keep from burning. Bake 425* F for 40-50 min.

As far as the filling goes my mom just slices granny smith apples really thinly (like potato chips) and tosses them with some cinnamon and sugar, sound simple, but when it's baked it tastes oh so good.

BASIC APPLE PIE RECIPE

CRUST (recipe makes one double crust):
2 1/2 cups white flour
2 tbsp. sugar
1/4 tsp. salt
1/2 cup cold butter, broken into small pieces
5 tbsp. cold vegetable shortening
8 tbsp. ice water

Measure the flour, sugar and salt togetherl. Stir to combine.
Add the chilled butter pieces and shortening to the bowl. Cut them in with a pastry cutter or knife. Don't over mix them.
Add the ice water. Mix until the dough holds together (add a bit more water, if necessary).
Turn the dough onto a lightly floured surface, knead it together, then divide in half.
Flatten each half into a disk, wrap in saran wrap and chill for at least half an hour.
Roll out one of the disks on a lightly floured surface until you have a circle that's about 12 inches in diameter.
Put the circle in a 9" pie plate, trimming any extra dough from the edges with a sharp knife (parents only). Return it to the refrigerator until you are ready to make the pie.
Add filling (see below)
Roll out the second ball of dough and cover top. Use a fork or your fingers to pinch the edges together. cut a couple slits in the top.

FILLING
1/3 to 2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
Pinch of salt
8 medium sized apples (a medium apple = about 1 cup)
2 tablespoons margarine

Heat oven to 425 degrees.
Peel, core and slice the apples. Try to keep the size of the slices even.
Mix sugar, flour, nutmeg, cinnamon, and salt in large bowl.
Stir in apples.
Pour into pastry-lined pie plate.
Dot with margarine.
Cover with top crust and seal the edges. Cut slits in the top.
OPTIONAL: Cover edge with 3-inch strip of aluminum foil to prevent too much browning. Remove foil during last 15 minutes of baking.

Bake 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust.

RUB BUTTER INTO FLOUR,TILL IT LOOKS LIKE FINE BREADCRUMBS.ADD A LITTLE WATER TO MAKE A FIRM DOUGH.DONT ADD TOO MUCH AT ONCE. IF YOU WANT A SWEET PASTRY YOU CAN ADD 1OZ'S OF ICING SUGAR TO THE FLOUR AND BUTTER MIX. JUST ROLL PASTRY OUT ONTO OVEN PROOF PLATE PUT IN APPLES AND COVER WITH PASTRY LID, PINCH THE ENDS OF THE PASTRY TO SEAL IT. BRUSH THE TOP WITH A LITTLE MILK AND SPRINKLE WITH SUGAR,MAKE A LITTLE CUT IN MIDDLE OF PIE TO LET OUT STEAM. BAKE IN MODERATE OVEN FOR 30 TO 40 MINS . TILL NICE AND BROWN.

I make a mile high apple cranberry pie, I got the recipe from a Better Homes and Gardens cookbook years ago. It uses 12 cups of sliced apples, you cook them down slightly in a couple tbsp water. I add lemon zest, dried cranberries cinnamon, nutmeg and brown sugar. The reason you cook them down slightly is so it reduces shrinkage in the oven, you don't end up with the big pocket of air under your top crust. You can freeze for later use at this stage.

INGREDIENTS

* 1 recipe pastry for a 9 inch double crust pie
* 1/2 cup unsalted butter
* 3 tablespoons all-purpose flour
* 1/4 cup water
* 1/2 cup white sugar
* 1/2 cup packed brown sugar
* 8 Granny Smith apples - peeled, cored and sliced

DIRECTIONS

1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
2. Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
