Mango Mousse, so easy you'll wonder how you did without it!

1 tub cool whip
1 large very ripe mango

Peel and cube mango flesh. Put flesh through blender or processor. When mango is smooth, using a spatula, mix it in with cool whip. Done!!

So good for summer parties!! My father in law loves it!!

Strawberry Shortcake (good for summer)

* 3 pints fresh strawberries
* 1/2 cup white sugar
* 2 1/4 cups all-purpose flour
* 4 teaspoons baking powder
* 2 tablespoons white sugar
* 1/4 teaspoon salt
* 1/3 cup shortening
* 1 egg
* 2/3 cup milk
* 2 cups whipped heavy cream

DIRECTIONS

1. Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
2. Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
3. In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
4. Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
5. Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

I live in the Philippines, in the province of Pampanga, and if there's anything we Kapampangans have a fondness for it would be sweets/desserts.

Here is a classic fiesta/holiday treat:

**Fruited Leche Flan**
You'll Need:
Flan:
4 eggs lightly beaten
1/2 cup evaporated milk
1/2 cup sweetened condensed milk
2 tbsp sugar
1 can (439 g) fruit cocktail, drained
Caramel:
3/4 cup sugar
3 tbsp water

Here's How:
1. Caramel: Heat sugar and water over medium heat until brown and sugar has caramelized. Distribute in 8 individual molds (1/2 cup capacity). Set aside.
2. Flan: Combine first 4 ingredients. Beat well. Strain mixture into prepared molds until half-full. Spread 2 tablespoons of fruit cocktail on each mold. Cover with wax paper or foil and steam for 40 minutes. Cool, then chill. Unmold and serve upside down.
MAKES 8 SERVINGS.


Here's another one (no-bake!):
**Tropical Blast**
You'll Need:
1 can (439 g) fruit cocktail, drained (reserve syrup)
20 pcs milk biscuit
Cream Filling:
1 tbsp flour
1/4 cup evaporated milk
1/4 cup sugar
2 tbsp butter or margarine
1 pc egg, lightly beaten
reserved fruit cocktail syrup
1/2 cup all-purpose cream, chilled

Here's How:
1. Cream Filling: Dissolve flour in milk until smooth. Combine with sugar, margarine, egg and fruit cocktail syrup. Cook over low heat with continuous stirring for 25 minutes (or until mixture coats the spoon). Cool slightly then add all purpose cream. Blend well. Set aside.
2. Crush 9 pieces biscuits in mortar and pestle or food processor to make 2/3 cup crumbs. Layer remaining biscuits in an 8x8 inch pan. Top with fruit cocktail. Pour cream filling. Sprinkle crumbs on top. Cover and chill overnight.
MAKES 12 SERVINGS.

Root Beer Float Cake

1 white cake mix
2 cans root beer
2 eggs
1 lb hard root beer candy crushed fine
1 box dried whip cream Like Dream whip

mix cake, eggs and 1 can root beer Bake as directed on box, while cake is cooling mix all the packs of the whip cream as directed but use the root beer instead of the milk frost cake with this, It tastes just like a root beer float, You can use Orange soda instead of the root beer and it tastes like the orange dream cycles.

Easy Cheese Cake

3 cups graham cracker crumbs
1 stick melted butter
1/2 cup sugar
mix together and press in the bottom of glass cake pan
1 8oz bar cream cheese softened
1 large tub whip cream
1 cup powdered sugar
mix well and spread on crust, top with your favorite pie filling. Chill about an hour.
this is fast easy and so yummy

Cheesecake-Brownies

Brownies:
? 1-1/2 cup flour
? 2 cup sugar
? 1/2 teaspoon salt
? 2/3 cup applesauce
? 6 egg whites
? 2 teaspoon vanilla
? 1/2 cup + 1 tablespoon cocoa

Combine dry ingredients ant wet ingredients separately, then mix together. Spray a 9x13” baking pan and pour mix into it.

Cheesecake:
? 3 8oz packages fat-free cream cheese
? 3/4 cup sugar
? 3 eggs
? 1 tablespoon vanilla

Mix all ingredients together until well blended. Pour on top of brownie mix. Run a knife through the batter to swirl. Bake at 350 degrees F for 40-45 min.

Chantal's New York Cheesecake
INGREDIENTS

* 15 graham crackers, crushed
* 2 tablespoons butter, melted
*
* 4 (8 ounce) packages cream cheese
* 1 1/2 cups white sugar
* 3/4 cup milk
* 4 eggs
* 1 cup sour cream
* 1 tablespoon vanilla extract
* 1/4 cup all-purpose flour

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Take a box of white cake (or angel food if you are watching your calories) and make cupcakes. When cupcakes cool, frost them with a whipped up mixture of one tub of cool whip and one box of softened cream cheese that had been mixed with an electric mixer until soft, fluffy and smooth(about 3-4 minutes). On top of the frosted cupcakes, place an assortment of fresh, nicely cut berries. It's easy and the frosting tastes very unique and fresh with the berries. It's like little mini shortcakes.
