what is a good recipe for baking chicken breasts in sour cream and maybe serve over noodles or rice??

you can make a saute. saute thinly sliced chicken breast in olive oil w/ chopped carrot, onion, celery and red pepper flake, bell pepper. cook eggs noodles until done, dress w. sour cream mix and serve.
sour cream mix is 1/3 cup sour cream, 1/4 olive oil well combined, splash red wine vinegar. you may not need all of it.

1 (12 ounce) package wide egg noodles
4 tablespoons butter (or margarine)
1/2 lb mushrooms, sliced
1 small onion, sliced
2 tablespoons flour
1 1/4 cups water
1-2 tablespoon white wine + 1/4 cup
1 cup weak chicken broth
3/4 teaspoon salt
1 teaspoon pepper
1/2 teaspoon paprika
2 boneless, skinless breasts
1 clove garlic, crushed
1 red pepper, seeded and jullianned
1/2 cup sour cream (I add just a little more, our preference)
1 tablespoon chopped parsley


Prepare noodles as directed and keep warm.
Season Chicken with salt and pepper to taste, bake 350* for 45 min, combine 1/4 cup wine and 1 cup weak chicken broth, pour into chicken pan before baking, loosley cover.
Meanwhile in large skillet over med heat, in hot butter/margarine, cook onions and garlic. When they begin to soften, add mushrooms and peppers, cook until tender, stirring occasionally.
In small bowl stir in flour and 1-1/4 cups water and add to veggie mixture in skillet, adding wine, salt, and paprika and cook over high heat until boiling.
Reducing heat to low, cover skillet and simmer 10 mins., stirring occasionally.
Stir in sour cream and heat through, don't boil or cream may curdle.

Toss 1/2 of sauce with pasta and place chicken on top, drizzle chicken with rest of sauce, garnish with fresh red pepper and parsley.

Apple Brandy Chicken
* 4 chicken breast halves
* salt and pepper
* 8 ounces sliced mushrooms
* 2 teaspoons olive oil
* 2 teaspoons butter
* 1/3 cup apple brandy, such as Apple Jack or Calvados
* 4 green onions, chopped
* 1/2 cup whipping cream or heavy cream

PREPARATION:
Flatten chicken; place chicken breast halves between pieces of plastic wrap and gently pound until thinned out and uniform in size. Sprinkle with salt and pepper. In a large heavy skillet, heat olive oil and butter over medium heat.Add chicken breasts. Cook for about 5 minutes, until browned, then turn. Add mushrooms and cook for about 5 minutes longer. Add green onions and apple brandy and cook for another minute, until chicken is cooked through and mushrooms are tender. Add cream and thyme; simmer until thickened. Taste and add salt and pepper if needed.
Serves 4.
