This is what I do...

1 box Lasagna noodes, oven ready or normal ones, doesn't matter
1 jar of speg sauce, or you can make your own(I make my own)
1 lg container of cottage cheese or ricotta cheese
1-4cup pkg of mozzarella cheese
ground beef

My homemade speg sauce:
Add a few tablespoons of oil to a sauce pan, add a medium chopped onion and two cloves of garlic. Sautee until onion is transulcent. Add 1 tsp italian seasoning, 1 tsp basil, 1 tsp oragano and 3 tsp sugar, salt and pepper. All of the spices can be adjusted to your taste. Then add lg can crushed tomatoes, let head, season to taste..DONE, but you can use a jar, whatever you wish..

Pre-heat oven to 350 degrees
Boil water for noodles and cook as directed, skip step if using oven ready noodles.
Meanwhile, brown ground beef until no longer pink
In bottom of large 9x13inch pan add a little bit of speg sauce, so noodles wont stick.
Put down a layer of noodles, 4-5 noodles
Then cover with 1/3 of the sauce, sprinkle with 1/3 of the ground beef, and 1/3 of the cottage/ricotta cheese, then 1/3 of the mozz cheese. Repeat until ingredients are gone, might have left over noodes, just pitch them or eat if wanted.
Bake covered in oven for 30-45 minutes, then uncovered for 15 minutes or until cheese on top is brown and bubbly..
Its really really good. And may I say, lasagna is always better the second day.

Well, ever since they came out with the "NO BOIL" lasagna noodles - that really makes things quick and easy.
The Barilla brand is good, and they have a recipe on the box. Also, you can really save time by using jar pasta sauce. But as a person of Italian heritage, please don't use cottage cheese! Use ricotta and mozzarella - layer with noddles and sauce according to package directions. Enjoy!

Skillet Lasagna

Meatloaf mix is a combination of ground beef, pork, and veal, sold pre-packaged in many supermarkets. If it's unavailable, use ground beef. Use a 12-inch nonstick skillet with a tight-fitting lid for this recipe.

Serves 4 to 6
1 (28-ounce) can diced tomatoes
Water
1tablespoon olive oil
1medium onion , minced
Table salt
3medium cloves garlic , minced or pressed through a garlic press (about 1 tablespoon)
1/8teaspoon red pepper flakes
1pound meatloaf mix
10curly-edged lasagna noodles , broken into 2-inch lengths
1 can (8 ounces) tomato sauce
1/2cup grated Parmesan cheese plus 2 additional tablespoons
Ground black pepper
1cup ricotta cheese
3tablespoons chopped fresh basil


Building Skillet Lasagna
1. Pour tomatoes with their juices into 1-quart liquid measuring cup. Add water until mixture measures 1 quart.

2. Heat oil in large nonstick skillet over medium heat until shimmering. Add onion and 1/2 teaspoon salt and cook until onion begins to brown, about 5 minutes. Stir in garlic and pepper flakes and cook until fragrant, about 30 seconds. Add ground meat and cook, breaking apart meat, until no longer pink, about 4 minutes.

3. Scatter pasta over meat but do not stir. Pour diced tomatoes with juices and tomato sauce over pasta. Cover and bring to simmer. Reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender, about 20 minutes.

4. Remove skillet from heat and stir in 1/2 cup Parmesan. Season with salt and pepper. Dot with heaping tablespoons ricotta, cover, and let stand off heat for 5 minutes. Sprinkle with basil and remaining 2 tablespoons Parmesan. Serve.

Step-by-Step: Building Skillet Lasagna

You can buy the lasagna noodles and ragu or something stupid like that and make a mess, or cook some Lasagna, the pasta is just that, good from any store. The sauce is the trick and the pizazz that makes any lasagna worth eating or not.
And don't skimp on the Ricotta or other chesses, and don't rush anything, al dante is your friend.

* 1 (4.5 ounce) can mushrooms, drained
* 1 (28 ounce) jar spaghetti sauce
* 1 (16 ounce) package cottage cheese
* 1 pint part-skim ricotta cheese
* 1/4 cup grated Parmesan cheese
* 2 eggs
* 1 (16 ounce) package lasagna noodles
* 8 ounces shredded mozzarella cheese

DIRECTIONS

1. In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
2. In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.

This is a VERY simple recipe:



1 large can of Hunts spaghetti sauce
6 hamburger patties
seasons for meat
9 lasagna noodles
shredded cheese


Directions:
boil the noodles
while the noodles are boiling, cook and season
the meat,and add all of the spaghetti sauce to it.
After the noodles are tender,and you have of added the sauce to it, put 3 noodles on the bottom of your pan, then put a layer of meat. DO THE SAME FOR THE NEXT LAYER!
after you have done the same for the next layer,put a layer of 3 noodles, then a layer of meat mixture.
MAKE SURE THE MEAT SAUCE COVERS ALL OF THE NOODLES ON TOP OR ELSE THEY WILL BURN

Easiest way huh? Well, this recipe is pretty minimal effort, probably won't taste quite as good as taking time with lasagna, but still tasty. Here it goes, and the measurements are estimates, use more or less of the ingredients to suit your taste buds.

Ingredients:
Italian sausage, about 1 lb.
One small frozen box of spinach
2 jars of your favorite pasta sauce ( I like mine saucy!)
One large tub of Ricotta Cheese
2 bags of preshredded mozzerella cheese, or one mozzerella, one monterey jack.
Parmesan cheese
No boil lasagna noodles.
Garlic (you can buy jarred minced garlic)
Onion (not purple, white or sweet yellow works good for Italian)
can of tomatoes
Basil, oregano, salt and pepper
a jar of tomato pesto ( you will only use about 2 tbsps, or to taste)

Heat oven to 350 degrees
To make:
Add at least one tablespoon of garlic to a large saucepan ( I add more but we love garlic), along with one whole large onion. Let saute for a minute or so, then add sausage and brown. Drain the sausage/onion mixture. Add a jar of pasta sauce, tomatoes, and the spinach to sausage and mix.

In a large bowl, mix together cheeses, basil, oregano, salt and pepper, and about 2 TBsps of pesto. Periodically taste this mixture, and add more pesto, pepper, garlic, etc until you get a taste you enjoy.

Grab a large glass baking dish, roomy enough to lay 3 lasagna noodles side by side without overlapping each other. Lay the noodles down, and cover with a thin layer of sauce.

Layer sauce, cheese mixture, sausage, noodles, and continue to do so until you run out of ingredients or room in the pan. Good idea to leave an inch or so from top of lasagna and top of baking dish, so none will overflow when you cut into it or while baking. Don't leave noodles on as a top layer, always put sauce and cheese over noodles, otherwise they will not cook properly.

Once layering is done, pour remaining sauce over top, as well as a generous sprinkling of parmesan cheese.

Put this in the oven for about 45 minutes to an hour covered with foil. After about 45 minutes, poke noodles with a fork and if they are tender, take the foil off and bake an additional 15 minutes until cheese on top is browned.
Yummy, serve with green salad and red wine, or iced sweet tea.

Buy some Stoffer's, put it in the oven, enjoy!

Easy Lasagna
Ingredients
1 pkg Lasagna noodles
1 Medium jar of spaghetti sauce
1 bag Shredded mozarella cheese
1 bag Shredded Italian mix cheese
2 lbs Lean hamburger meat
Garlic Salt
Preparation

Cook lasagna noodles according to directions on package. Brown the hamburger meat and a dash or two of garlic salt.


Preheat oven to 350.


Mix hamburger meat with spaghetti sauce and put thin layer on bottom of 9x13 baking dish. Add layer of pasta noodles.


Add layer of spaghetti sauce mixture, mozarella, Italian mix, then noodles.


Repeat until dish is full. Ending with a thin layer of cheese.


Bake for about 45 minutes. Remove from oven and let cool for 10 minutes before cutting.
