What are some tasty egg recipes for breakfast?!

Question:

What are some tasty egg recipes for breakfast?

I don't like the taste of eggs that much, but I know they are good for you, and they keep your hunger at bay until lunch. I don't like fried, sunny-side up or poached eggs, but I will sometimes eat scrambled and even hard-boiled. I do like deviled eggs. I need these recipes to be quick and easy or something I can make at night and re-heat in the morning.

Answers:
Try this casserole, and then you can microwave it quickly in the morning if you cut the casserole into servings and individually package it up.

12 eggs
1 package turkey bacon, diced, fried well until very crisp (15 minutes at least, stirring constantly)
1 bunch green onions, diced
1 diced large tomato
dash of dried basil
salt, fresh ground pepper
8-12 ounces shredded sharp cheddar cheese

mix all ingredients except cheese and pour into a buttered 9X13 pan. Top with cheese, cover with foil. Bake at 350 until set in the middle. Remove foil 10 minutes before taking out of the oven. The whole casserole usually takes about 45 minutes to bake. You can serve it hot, or cut it up and store it and take one square out every day for breakfast.

mmm good idea. I'm hungry!

Sometimes I put salsa in mine

I put a little fat free italian dressing in my scrambled eggs. It adds a good flavor.

Take a cup and push it through a slice of good bread, to make a round hole in the middle. Butter up a pan and start the bread toasting, as for a grilled cheese sandwich. After about half a minute, pour a beaten egg into the hole in the bread. Let cook on first side for a couple of minutes, then flip and let cook another two. Less if you don't like really dark toast. Cook up a couple of these, and it'll hold you a while. You can use low cal bread if you need to.

Make a nice fluffy omlette! Separate the egg whits from the yolks and beat the whites until they become very light and flufft, stiff almost. Then fold in the yolks, you can add anything you like to it bacon cheese mushrooms tomatos, or just as it is!
Fry it lightly in oil or butter turn it over and serve hot when golden brown!

Yum making my mouth water!

Omlets are the best way for me to get a bit everything into my breakfast diet.

You can put in about anything inside.
cheeses, red peppers, mushrooms, onion, garlic, left over steak, smoked salmon! (mmmmm),
kind of like a pita wrap... but its made out of a healthy egg,,, and not made out of an unhealthy chunck of bleached white flour product!

enjoy! and experiment!

omlets are always good. just chop up some onion, peppers, avacado, cheese and other omelet worthy food and refrigerate them the night before then prepare your omlet the next morning

Eggchilada
2 eggs
1 large flour tortilla
2 tablespoons salsa
2 tablespoons shredded cheddar cheese
Beat eggs and pour into a non-stick skillet over medium heat. As eggs begin to set, gently draw a pancake turner across the bottom of the skillet forming large soft curds. Cook until eggs are thickened, but still moist. Fold in salsa and cheese. Spread egg mixture down center of tortilla. Roll tortilla around eggs. Garnish with salsa and sour cream, if desired.

Eggs in a Pocket
4 eggs
1/4 cup skim milk
1/3 cup onion, chopped
1/3 cup red pepper, chopped
1/3 cup green pepper, chopped
2 teaspoons dry mustard
1/2 cup reduced fat cheddar cheese
2 whole wheat pita bread shells, halved
Salsa, optional

Whisk together eggs, milk, onion, red pepper, green pepper, and mustard. Heat 10-inch skillet to medium high heat and pour egg mixture into pan. Scramble eggs until firm but still moist. Just before eggs are set, add cheese and warm until melted.

Warm pita pockets in microwave for 20 seconds. Open one pita half and spoon ? of egg mix into shell. Serve hot. Serves 4.

Taco Frittata
1/2 lb. ground meat
1 teaspoon minced onion
1/2 package taco seasoning
1/4 cup water
10 eggs
1 cup cheddar cheese
Salsa
Tortilla chips
Shredded lettuce

Brown meat with minced onion in 10-inch skillet. Drain. Add taco seasoning and water; simmer for 2 minutes. Beat eggs and pour over meat mixture. Cover pan and turn heat to low. Cook 10-12 minutes until eggs are set. Sprinkle with cheese and cover skillet until cheese melts. Serve with salsa, lettuce, and chips, as desired.

When I'm scrambling eggs I like to mix in a spoonful (per egg) of pre-made salsa. Then scramble and top with a little bit of grated cheddar. If I have an avocado, I'll slice that and toss it in, too. If you are preparing at night and reheating in the morning, I would put the cheese on when you reheat the eggs.

Another thing I sometimes do is scramble an egg, top it with a slice of american cheese and slide it in onto a piece of toast. This can be done quickly in the morning, and the slice of cheese melting on top of the eggs holds it together so you can it eat on the run.

I really enjoy the scrambled eggs I make. I take some precooked bacon and break it up into smaller pieces and put it in with the egg batter before I cook it. You can also use ham, veggies, or anything else you think might be good. It makes it much tastier. Also make sure you put milk and butter in with the eggs before you cook it.

well you basically omitted all forms of egg other than scrambled, so, scrambled. Add some veggies and ham and cheese to make it interesting.

Here are some great links that have loads of quick and easy egg recipes:

http://www.mrbreakfast.com/

All of these except for the hard boiled eggs and potatoes can be ready, start to finish in under 10 minutes.

World's best omlette (if you lilke spicy food)
Scramble 23 eggs in a bowl w/ 2tbls milk
heat a medium non-stick frying pan on med-high
spray with some Pam, and add some raw Chorizo, diced onion, sliced jalapeno, diced roma tomato.
Stir until the chorizo is cooked and the onion starts to carmalize.
Add the eggs, stir together, flip and add some Chiauha (sp?)cheese.
Fold and eat with some salsa and sour cream. Add mushrooms if you like.

Runner up: Veggie ommlette
Same as above but use Mushrooms, broccoli, tomato, onion, green pepper, and egg whites if you want. I use American or provolone cheese, and eat with salsa or salt and pepper.

Garbage ommlette:
Same as above, but you use leftovers and items you have on hand. Any veggies, any lunch meat, any breakfast meat, chicken, steak, sausage, whatever you have available.

Hard boiled eggs are great.

Egg sandwich
Hard fried egg between toast, English muffin or biscuit, topped with bacon, ham or breakfast sausage, cheese, grilled onion if you want and some salt and pepper.

Scrambled eggs

All of the above are great with these:
Diced potatoes on the center of a large sheet of foil, sprinkle generously with salt and pepper, oregano, diced onion (garlic, bacon and jalapeno optional) and a little butter or olive oil. Give them a stir to coat the potatoes and fold the 2 sides up and roll the ends to make a pouch. Bake at 450 degrees for 30-35 minutes or until they are done. I make a ton of these and refridgerate them to eat for days. 1 large potato is enough for about 2 servings. These are great with cheese or as a skillet with an ommlette.

The trick to a great fast ommlette is a preheated (hot) pan and plenty of Pam. An ommlette only takes 20-30 seconds once the eggs hit the hot pan. Stir and flip non stop = fluffy delicious eggs.

Try this:
Tasty Meal with smoked Haddock, poached Eggs and Halondaise

* Add tomatoes and tarragon to the mixture and mix, leave in a warm place( over a pan of hot water).
* Poach the eggs in a gently simmering water, let them cook for 2-3 minutes until the whites are set and yolks are soft.

Remove the skin from haddock and drain them with kitchen towel.

Tip:

* You can poach the eggs in advance. once they are cooked, plunge them into a bowl of cold water and refrigerate for up to 12 hours. Reheat by immersing the eggs in a bowl of very hot but not boiling water.

I'm not an egg fan either, unless they are scrambled with cheese or deviled. But I have become fond of scrambling eggs and cheese with green peppers, red peppers, onions, chopped ham.
I hype it up a bit with either crushed red pepper or a tad of jalapeno pepper(if you favor spicy dishes). It sounds like it takes a while but not really.

If I don't want to prepare all those ingredients, I cheat a little and pick up Jimmy Dean's Breakfast Skillet meals. Then all I have to do is add the eggs......quick and easy.

Try breakfast burritos.

I make these for my husband who is not an egg-fan. You can put whatever you like in them. I use scrambled eggs as the base, then add chunks of ham, grilled onions, cheese, occasionally some potatoes (leftover tater tots or something like that). I roll them up in a flour tortilla and them wrap them good and tight in plastic wrap. If you want to make a bunch and freeze them, just take one out the night before to thaw and the next morning microwave it for 45 seconds on high. Makes a great breakfast on the go.

Breakfast burritos -
Scramble eggs, with shredded cheese, crumbled bacon, ( or sausage ) onion, bell peppers, if you like, mushrooms - really anything can go in it. Put it on a tortilla and roll up and eat - you can put hot sauce or salsa' on it if you want also.

You have to make this in the morning, but it is good - cut a hole in a piece of bread, butter the cut out piece and the other piece, put it in a frying pan and break an egg inside the hole. Cook until done, only flipping once the egg has cook and won't run when you flip it. Brown the round piece on both sides - and use it to dip the runny part of the egg(yolk) when you are eating it.

Easy Breakfast Egg Casserole:

55 min 10 min prep
8 servings

6 slices white bread, torn into pieces
1 lb bulk pork sausage, cooked and drained
1 cup cheddar cheese, shredded
6 eggs
2 cups milk
1 teaspoon salt
1/4 teaspoon pepper

1. Heat oven to 350°.
2. Grease a 13x9 inch baking pan; place bread in the bottom and sprinkle with sausage and cheese.
3. Beat eggs, milk, salt and pepper with a whisk; pour over the bread mixture.
4. Bake 40-45 minutes or until eggs are set in the center and lightly browned.

You already have good answers. Eggs are so easy. Keep cheese, ham, turkey bacon, sausage, mushrooms, shallots, peppers or whatever you like in plastic bags stored in the freezer. Spray the pan with non-stick Pam or olive oil. Mix a little milk in a bowl and whip the eggs with a spoon. Just mix and cook. I cook them in 5 miinutes tops.

When I want a bigger but healthier meal I add more onions, peppers, mushrooms, etc. to increase my vegies. Have fun.

how about a breakfast caserold made the night before and while you are getting ready for school work or whatever it can be baking? 1 roll sausage, 1 bad shredded cheese, 3 pieces of bread made into cubes and 12 eggs ....Cook sausage then add everything together cook at 350 for an hour.

I like to make an omelet with spinach or broccoli, cheese (Parmesan, cheddar or even Swiss)croutons-after cooking place some salsa on top of them with a piece of whole wheat toast. I like to add a fruit and or applesauce. Deviled egg is good as a sandwich it's easy-you can take it to go.

an omlete:

Scramble up some eggs- I add a bit of milk.
Put it in a nonstick pan and let it cook. To one side, add cheese or whatever you like. My husband likes mushrooms, green peppers, and tomato with cheese. When the egg is cooked, fold it over carefully to the other side- easy, quick and really, really good!

Hi, Allison - I have a really good recipe, but I'm not sure that you will get all the nutritional benefit from a hard-boiled egg...but, here goes

the night before make a white sauce
separate the hard-boiled egg, adding the grated whites to the sauce
reserve egg yolks
fry 2 strips of bacon

the next morning, make yourself toast or English muffin or whatever
put your 2 strips of bacon on top
pour your reheated white sauce on top
grate the egg yolk on top

EGGS A LA GOLDENROD
