Cooking Prawns?

I am desperate to get a prawns recipe which involves grilling or lightly frying them. But they alwys turn out way too chewy and rubbery.

I remember having prawns in in a sitrfry with just lime and chilli and ginger at a restaurant and it was so succulent....

Help????

don't cook them for so long, they only take a minute or so

Most prawns are already cooked. Try adding them towards the end.

Try pan searing them with extra virgin olive oil, a pat of butter,minced garlic and a dash of salt & pepper. The trick is to have the skillet nice & HOT before adding all the ingredients. and also, don't overcook!

if you're prawns are already cooked, they merely need heating through. If you're grilling them you're better off with raw ones. Again don't overcook them, as soon as they turn opaque they're done.

You want to cook prawns, or shrimp for that matter, until they have just turned pink and starting to curl. Then take them off the heat. They will finish cooking on the inside by themselves. It only takes a few minutes. If overcooked they are chewy. So you can't walk away. You really can't give a time either, as they come in all different sizes, and each size cooks for a different amount of time. But with practise and watching for those visual cues, you will get it right.

They only need warming through if they are pink as they are already cooked---Add them at the very end of your cooking.Uncooked(black)prawns are ready as soon as they turn pink.Large uncooked prawns wrapped in proscuttio(?spelling) and grilled or BBQ are good.

You're overcooking them... If you grill them do so untill they look ALMOST done and then wrap them up in aluminum foil and they will finish cooking off the grill... I would suggest steaming them though, it's pretty hard to make them rubbery in doing so...

the secret is a really hot wok and for prawns only a minute or so the intense heat will seal the moisture in side the prawns then a little garlic lime juice and some chopped peppers in a bed of egg fied rice superb

Ingredients
500g/1lb 2oz medium egg noodles
2 tbsp sesame oil, plus extra for tossing the noodles
2 red chillies, de-seeded and finely chopped
thumb-size piece fresh ginger, peeled and finely chopped
3 large garlic cloves, chopped
1 red pepper, de-seeded and thinly sliced
1 bunch of spring onions, thinly sliced on an angle
400g/14oz raw tiger prawns, shelled
2 large or 3 small pak choi, or 200g/7oz Chinese flowering cabbage (choi sum), shredded
1 lime, juice only
2 tbsp soy sauce
2 tbsp sweet chilli sauce
100ml/3?fl oz Chinese rice wine or dry sherry



Method
1. Cook the noodles according to the instructions given on the packet. Drain and toss in a little sesame oil to prevent them from sticking together.
2. Heat a wok and add the sesame oil. Once the oil is shimmering, add the chillies, ginger and garlic. Stir-fry for 30 seconds before adding the red pepper, spring onions and shelled prawns. Cook for about 3-4 minutes until the prawns have turned pink. Add the shredded pak choi or choi sum, noodles, lime juice, soy sauce, sweet chilli sauce and rice wine or sherry. Stir-fry until heated through and serve straight away.

In Texas, we split them down their back, but not all the way through, just enough to open up and put a little Pepper Jack cheese and a small slice of jalapeno in there, take a piece of bacon, and wrap the prawn/shrimp in it. Skewer them and grill them on low heat for only a few minutes until bacon done.

you're over cooking the prawns and your also need to buy raw prawns not the cooked one otherwise it will be like eating a tyre. prawns cook very quickly you need to cook them till they have turned pink and thats it.

The secret is to add the prawns into a hot pan with a little oil and crushed garlic. Toss the prawns around until they are curled up and the colour changed to orange. Don't overcook them! Then serve them with a sqeeze of lime, and a dip with chilli, ginger, soy and honey/sugar.

prawns are like fish...they dont take long to cook...
peel loads of garlic,put in pan with olive oil & add in the prawns.....all ready in about 5mins!!!
i usually put in a wrap 2gether with fresh sald.....yummy!!
