Where can I get the recipe for Monicals thin crust pizza?

See Monicals.com - Monical's pizza locations are in Illinois, Wisconsin and Indiana. Their pizza is amazing and I am looking for their recipe since they won't allow franchising anywhere near where I live.

It isn't so much the formula that makes for a crispy pizza, but instead, its how the dough is handled and how it is baked. Just make sure you give the dough plenty of fermentation (the overnight dough management process works well) and be prepared to bake the pizza correctly. If you have an irrimpingement oven you should be looking at bake times of 6 to 7.5 minutes for 12-inch thin crust pizzas, if you are using a deck oven, try deleting the sugar from the dough formula and baking at 525F right on the deck surface. If you have too much sugar in the dough formula the crust browns too quickly without developing a good crispy layer at the bottom of the crust and as a result it softens up very quickly after baking.
Basil is also a key ingredient in the crust.
