Littleneck clams?!

Question:

Littleneck clams?

I bought 2 pounds of them and discovered I have no white wine. What else can I do with them? I have to use them today.

I just need ideas, unless you have a tried and true recipe.

Answers:
My favorite is steamed and dipped in melted butter!!!
My husband loves to make shrimp and clam marinara over spaghetti. He also makes a white clam sauce without using white wine.

First of all , eat them. They're delicious raw on the half shell with cocktail sauce. If you like them cooked, turn putting them in a light tomato sauce. Or get some bottled clam juice. Saute some onion and garlic, add the clam juice parsley and little necks. When they open, serve it over pasta.

VONGOLE AL FORNO

1 tbl. roasted red pepper-minced
1 tsp.parsley- chopped
2 tbls.pancetta-chopped fine

1 lemon

Preheat broiler/mix all the ingredients except clams/open clams over a bowl to retain clam juice/ Spoon equal amounts of mixture on each clam/Drizzle clam juice from the bowl over the mixture and sprinkle lightly with wine/Place in a baking dish and Broil for about 6 minutes/serve with lemon wedges.

How about some yummy fried clams? (I'd ship you some of my wine, but I don't think it'll get there in time. ;-)

you can't go wrong raw.
