Recipe ideas please......?

I need a new dessert idea.
What I usually make :
Lemon tart, bread & butter pud, trifle, egg custard, pavlova, choc fudge cake, carrot cake, roulade.....I need some new ideas......needs to feed between 6-8.

Any ideas gratefully received.

How about a Magic Pudding?

You will need a large capacity blender, and an 8" (20cm) pie dish.

Ingredients:- 4 Eggs, 2 oz (50g) Butter, 8 oz (225g) Sugar, 2 oz (50g) Self Raising Flour, 1/4 teaspoon salt, 2 teaspoons grated lemon rind, 4 fl. oz (120ml) Lemon Juice, 12 fl. oz (360ml) Milk, 3 0z (75g) Dessicated Coconut.

Method:- Put all the ingredients into the blender, and whizz for 2 - 3 mins. Pour into a greased pie dish, and bake on Gas mk 4 (350f or 180c) for about 1 hour, and the top is golden brown.

Serve warm with a dollop of double cream. Yummy.

This pudding when cooked will magically have a pastry base, custard middle, and a lovely lemony/coconut topping, which it will have done all by itself. That's Magic! Enjoy.

I make this quite often

French fried frozen oreo cookies. Batter them first and french fry them until the batter is hard and remove, put in freezer for an hour. Then eat.

rich lemon cream

1/2 pt cream
6 tbsps sugar boiled gently together

then add as much lemon juice as you want depending on the strength of taste

to make it extra special grate chocolate over the top

very rich and very very simple

best made the day before so it sets properly

Pound Cake, it is good, easy to make and remember to freeze it, thaw it and then serve it. it is better if it is frozen over night first. then put your choice of topping on it. My personal fav. is Strawberries

cheese cake
no bake
2 8oz packages of cream cheese
1 10oz of cool whip
2 cups sugar
1 already made graham cracker crust

mix sugar and cool whip and cream cheese in a bowl make sure not lump and well blended then on the crust place it and refridgerate for 4 hours

or
apple crisp
fresh granny smith apples diced down to little slices and pieces
add brown sugar oats cinnamon nut meg on top and bake in oven till warm and gooey and tada

I make a Sopiapilla Cheescake that is really good.

2 (8 ounce) cans crescent rolls
2 (8 ounce) packages cream cheese
1 cup sugar
Topping
1/2 cup butter, melted
3/4 cup sugar
cinnamon

Preheat oven to 350.
In an 8 x 11 dish, unroll 1 can of crescent rolls, making 1 solid layer.
Cream together 1 cup sugar and cream cheese. Pour over crescent rolls.
Unroll other can of crescent rolls to form top crust. Pour melted butter over top of crescent rolls.
Sprinkle with cinnamon and 3/4 cup of sugar.
Bake in 350 oven until crescent rolls are done.

Take 500 grams of cottage cheese, three to four eggs, vanilla, half a cup or more sugar, chocolate or fruit, process til smooth, bake at 125-150 Celsius. Quick and easy cheesecake. Healthier than what you have been doing.
Works well with milk too. but then its called pudding.

Apple Cottage Pudding

Flour, 1 ? cups
Baking powder, 2 teasp.
Salt, ? teasp.
Shortening, 3 TAB
Sugar, 1/3 cup.
Egg, 1
Milk, 2/3 cup

Sift flour, measure; add baking powder and salt; sift again.

Cream shortening; add sugar gradually; continue beating until light and fluffy. Add egg and beat well; add milk. Add sifted flour mixture and stir just enough to moisten the dry ingredients. Do not beat.

Melt 3 TAB butter in 8x8 in square pan. Add ? cup firmly packed brown sugar and ? tsp cinnamon. Cover with 2 ? to 3 cups apple wedges cut from firm apples.(Opt; sprinkle with raisins and pecans). Pour batter over fruit and cook 25 to 30 minutes. Invert cake onto a plate and let it sit for a minute to allow sirup to drain onto cake. Serve with Brown Sugar Sauce and whipped cream or ice cream.

Brown Sugar Sauce.

In a saucepan melt:
2 TAB butter or margarine.
Blend in a mixture of:
2 Tab flour
? cup lightly packed brown sugar
? tsp salt
Gradually stir in:
1 cup water
Cook stirring constantly until thickened. Remove from heat and stir in:
1 tsp vanilla.
Serve hot on steamed or baked puddings.
Makes 1 ? cups.

This is a hit for anyone that likes peanut butter....

Peanut Butter Pie

8 oz. cream cheese
1/2 c. peanut butter
1 c. powdered sugar
1/2 c. milk
1 container cool whip
1/4 c. chopped peanuts(optional)
1 vanilla wafer crumb crust(graham cracker crust can be substituted)

Whip cream cheese until soft. Add powdered sugar and peanut butter. Slowly add milk and fold in cool whip. Pour into crust. Sprinkle peanuts on top. Freeze 2-3 hours.

Optional- put chocolate syrup on top 20 min. before serving.

Here's a fun & easy one using just a food processor, no baking - Chocolate truffles:

1 square unsweetened baker's chocolate
Handful of almonds
Honey
1/2 tsp of vanilla
Cinnamon

First, process just a few almonds down to tiny little bits, place in a bowl for after.

Then, process the chocolate & almonds completely. Add a healthy amount of cinnamon, to taste. I put in a lot, but I really really love cinnamon. *smile*

Next, add in the vanilla and a little bit of honey, process for just a few seconds to mix together. Then add enough honey that when you process it for 15-20 seconds, it starts to stick to itself, creating a big ball. (If you didn't add enough the first time for it to stick together, you can always add more and continue processing, works just fine this way.)

Separate into bite-sized pieces and roll into smooth balls. Roll into the almonds from the first step above, and you're done!

Makes 10-12 truffles, recipe can easily be doubled/tripled, as needed. Store at room temperature. They can be refrigerated if you want to make them in advance, but then let them sit out for an hour or so before serving. I find they taste better at room temperature.

Fudge Brownie




300 gms Butter (approx 10 ? ounces)

1 ? cups Cocoa

3 ? cups Sugar

? tspn Salt

7 Eggs

? tspn Vanilla

1? cups All purpose flour

2 cups Chocolate chips (I use Hersheys)



Melt the butter completely. Pour onto cocoa in mixer and combine. Add Sugar, eggs and vanilla. Mix on High speed until colour lightens slightly (approx 5 minutes)



Add flour salt and chocolate chips and mix until just combined. Pour into a 32X23X5cm lined baking pan and bake for approx 65 mins at 150C/300F.



The cake should crack slightly around the edges but still be soft to the touch. Allow to cool before cutting. Store in an airtight container

I use this as a dessert, cut into wedges and served with unsweetened cream (not the canned junk) and fresh berries.
