I'm gonna cook some Ribs and I need some recipe's. Any Ideas?


Answers:
Jamaican Jerk Ribs

Jerk marinade/seasoning:
4 pieces of chopped scallions
3 tablespoons ground ginger
3 tablespoons light brown sugar
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons kosher salt
3 habanero peppers minced
2 Scotch bonnet peppers seeded and chopped(very hot)
1 tablespoon dry thyme
2 teaspoons coarse black pepper
2 teaspoons ground cinnamon
2 teaspoons ground allspice
1/2 teaspoon of nutmeg
2 teaspoons ground cloves
3 tablespoons of Lime juice

Sauce:
1 1/4 cups ketchup
1/3 cup soy sauce
2 tablespoons marinade (reserved from above)
3 cloves garlic, minced
3 tablespoons minced fresh ginger
1/3 cup dark brown sugar
1/3 cup distilled white vinegar
1/2 cup of grape jelly
1/4 cup of coke
2 harbenero peppers chopped
1/2 cup of bbq sauce (favorite brand)

Meat: 1 or 2 slabs of pork ribs

First, soak some hickory wood in a bucket of water.

Begin by trimming the fat from the meat. Would have been nice to marinade the meat for 48 hours but since you don't have that time we'll do the quick method.

After trimming the meat. Rub seasonings into the meat and cover tightly for 2 hours in refrigerator. Get a pot of boiling water ready. After the time has passed take the ribs out and place into pot of boiling water that has been seasoned with spices as well. Boil covered for 15 - 20 minutes. Not much more because you don't want to boil out all the flavor. Start your grill while it is boiling. I use charcol because I love the flavor and the way it cooks. Get coals to ash over then move to the side.

Once the meat has finished boiling remove from heat and allow to cool slightly. PLace meat on the grill over heat just to sear a little then move to other side of grill. Add the hickory wood on top of hot coals and allow it to smoke for an hour or so. Do not open cover or do anything to the meat.

Start to simmer your sauce.

After the hour remove meat from the grill and place inside a shallow baking pan with pineapple juice, brown sugar, garlic, jerk seasoning,and apple cider vinegar. Cover with aluminum foil and place in preheated oven at 325 for 15 minutes.

Remove from oven and take back to the grill. Place back on the grill and slather with sauce. Turn meat every 5-10 minutes and generously bathe in sauce. allow heat to cook the sauce into the meat and create a glaze. Do this for about 45 minutes and you should be ready to feel the island.
Make yourself some Jamaican punch, Caribbean rice and sit back and enjoy..

I use Sweet Baby Ray's Hickory BBQ sauce. Bake 'em in the oven on low (about 300 degrees) for about an hour and then finish cookin' them on the grill.

SOOOOO good you can drink it out of the bottle!
Marinate the ribs for about 15 to 30 minutes, and grill them.
Guarenteed to melt in your mouth :)

Take a diced onion, liquid smoke (1 tsp) and enough Dr. Pepper to cover the ribs in a big pot. Boil for approximately 1 1/2 hour or until ribs are very tender. Put ribs on the grill and brush with your favorite Barbeque sauce for approximately 30 minutes, (basting frequently as to keep moist). or put in oven for about 30 minutes at 350 degrees. It sounds nutty but this is the best recipe I've tried for ribs.

Most simple of all:

Preheat your oven to 250degF

Peel the ribs (there is a paper like skin on the bone side of the slab that is tough. Peels off easily in one or two pieces)

Season your ribs with a good steak seasoning. Place in a shallow pan with a little bit of broth, juice, or beer. Cover tightly with foil and "pan steam" in the oven for a few hours at 250degF.

Let the ribs cool back down so that you can handle them without breaking them up.

Then do ONE of the following:

Grill with your favorite BBQ sauce as a mopping sauce to glaze and reheat the ribs.

OR

Roast in the oven on a sheet pan with your favorite BBQ sauce. 400 DegF.

It's hard to overcook ribs, but it can be done. The second cooking process is just to glaze the ribs and flavor them. You want the glaze to dry out and caramelize on the surface of the meat.

Once they are nice and glazed, let them rest for about 5-10 minutes before trying to cut them between the bones.

boil the ribs for 30-45 minutes, then marinate them after cooling with tereyaki sauce, for about 1 hour. now use 1/4 cup of yellow or dijon mustard, 1/4 cup of worchestershire (aka whatsthisshithere) sauce i recommend french's because it's cheaper than lea and perrin's. 1/4 cup dark brown sugar, 1/3 cup ketchup. and 1/8 cup clover or wildflower honey, 1 teaspoon of ground black pepper, and 1 teaspoon paprika. this is a kick butt poor man's bbq sauce. you can marinate the ribs in the sauce, but do not grill them at over 300 degrees or you will burn the sugars, best to grill first then bbq sauce 15 minutes befire they are "done"

To the person who said boil your ribs for 45 minutes DONT!!! You will boil the flavor right out.

If you want tender ribs on the grill SLOW cooking is the way. If your using a charcoal grill place the coals on the outside of the grill and none in the middle. And stand the slabs upwards so they are resting on each other and just let them sit and cook for hours until they are done and they will be tender.
