The way my husband likes it is roasted in the oven drizzled with olive oil for about 3 hours so its soft in the middle then for the last 5-10 mins I turn the heat up so its crispy on the outside and serve on some beansprouts cooked with garlic, ginger, sesame oil, salt and white pepper. Or do the lamb the same way and make some crispy pancakes just add hoi sin sauce and finely chopped spring onion. My husband is Chinese and loves them
