Chickpeas have a distinct taste which must be overcome. There are many herbs and spices which help do this. Tomato sauce drowns most Italian dishes and could also be used with chickpeas.
Dr. Samuel Johnson's recipe for cucumber might be useful here, substituting chickpeas for cucumber. 'Slice thinly the cucumber, sprinkle liberally with vinegar. Salt and pepper may be added before throwing the cucumber through the kitchen window.'

can Italian plum tomatoes - (14 oz) chopped, with

teaspoon fresh lemon juice

can chicken broth - (14 oz)
Salt to taste
Freshly-ground black pepper to taste
cup chopped flat-leaf parsley
Cooked couscous for serving (optional)
Preparation
Step 1
Place the olive oil in a heavy saucepan over medium-low heat. Add the onion; stirring occasionally, cook until wilted, about 12 minutes. Add the garlic during the last 2 minutes. Stir in the cumin and cook 2 minutes more to mellow the flavors.
Step 2
Add the chickpeas, the tomatoes with their juices, thyme, honey, lemon juice, broth, salt and pepper. Bring to a boil, skimming off any foam that rises to the surface. Reduce the heat and simmer, uncovered, for 15 to 20 minutes. Adjust the seasonings and stir in the parsley.
Step 3
To serve, spoon couscous (if desired) into 4 shallow bowls and top with the stew. Serve immediately:

Ok this the ultimate food with chickpeas. It's a Caribbean street food which is found in Trinidad and Tobago. It's commonly called "Doubles" which consists of "Bara" a fried flat flour somewhat of like a tortilla however soft in texture and boiled chick peas called "channa" with herbs and spices. Now the name "doubles" comes in cause there's 2 bara like a sandwich and the channa inside. It's usually served with minced pepper (pepper sauce), "bandanya" also called "shadon benny" (google it) cucumbers grated, tambrind sauce, coconut chutney (roasted coconut grated finely), mango anchar (google it) Kuchela (grated green mangoes and cured in mustard oil). It depends on what u prefer. add it to a food processor with some tahini (sesame paste), garlic, olive oil, and salt, and process into a paste, then dip chips, veggies, and use as a spread on sandwiches.
Chana Masala is very good. I use the MDH brand chana masala, which is available at Indian or South Asian grocers. It's very tasty!

Chana Masala which is a curry dish with tomatoes and onions, is a delicious and very filling alternative to fish or meat based curries.
I have sent my sis to fetch me butter beans twice before and both times she got me chick peas :-S anyway I used them eventually. I chuck them into salads and stirfrys :-)
