I absolutely love omelets...you can add mushrooms or green peppers, green onions, yes salsa is fantastic as a topping or mixed right in but it might be a bit soggy that way.

One of my favourite omelets is asparagus tips with thinly sliced onions. I add a bit of olive oil to fry the spears and onions with but you can add spray Pam and use a bit of water to saute and soften.

Cheese and bacon or substitue low fat salami slices/ham/turkey, etc. too. The sky is the limit.

mushrooms and tomatoes.how about herbs for flavour?

if you want to go healthy try an egg white omelet with veggies like bell peppers, mushrooms, tomatos and spinach. as far as salsa and sour cream go. Salsa yes, sour cream id try to steer clear of. and for a side try dry wheat toast. Bon apetite and good luck.

If you want to go super easy (and I know you do, LOL) get some of the super lo fat egg beater cartons with the spicy western or garden vegetable flavors. Just heat the pan and pour them in...it is sooooo easy, and my kids also like them.

chop up your fave vegies and set aside. Take 4 eggs and throw away3 yolks. If use a pan use olive flavored PAM use low heat and slowly center the moist egg mixture to the middle.and just flip it and put your fave mixes and fold quickslightly press and turn over. quickly serve and you have a low cal high protien breakfast You can anything you want because early in the day you will be less likely to feel starved.

You could add some onions, peepers, mushrooms, or olives. You might want to use egg whites only or egg substitute. I have a great recipe for a healthy omelet.
1/4 cup small broccoli florets
2 tablespoons clarified butter (or 1 tablespoon olive oil and 1 tablespoon butter)
1/4 cup diced Roma tomatoes
1/4 cup diced yellow onions
1/4 cup diced green pepper
1/4 cup diced mushrooms
Kosher salt and freshly ground black pepper
3 eggs, well-beaten
1 ounce Muenster, shredded
1 ounce Cheddar, shredded
Whole wheat toast and fresh fruit, as accompaniments

Steam the broccoli, either in a microwave or steamer, until tender and reserve.
Melt the butter in an omelet pan or small skillet over medium-high heat. Add the tomatoes, onions, peppers, and mushrooms and cook, stirring frequently until the onions soften and the tomato juices evaporate, about 5 minutes. Add the broccoli to the pan and season the vegetable mixture with salt and pepper. Pour the eggs over the vegetables. Cook until the eggs begin to set 2 to 3 minutes. Sprinkle the cheeses over the omelet. Cook until the eggs are no longer runny then fold the omelet in half. Raise the heat if the omelet is not brown. Cook for another 1 to 2 minutes, if necessary, then transfer to a plate and serve with whole-wheat toast and fresh fruit.

Hope you enjoy!

Use only the egg whites and add in spinach and tomato...yum. You can also add low-fat swiss cheese and smoked turkey to this for some extra flavor.

spinach and feta cheese, or spinach and tomatoes
peppers and mushrooms
hot peppers and mushrooms
salsa and sour cream is not all that bad, if you pick lower sodium salsa, and use just a little bit of sour cream (no more than a table spoon) . Or make your own salsa- that way you can control the sodium
