Why are some hardboiled eggs in the same batch easy to peel?!

Why are some hardboiled eggs in the same batch easy to peel?

and others the shell is like it was super glued in place and the egg rips all to pieces while you are trying to peel it?


Answers:
The eggs were not cooled properly. To get the best result when peeling hard boiled eggs, take them directly out of the boiling water and place them in a large bowl that is filled with Ice water (use plenty of ice) Once the eggs are completely cooled slightly tap it on the counter and crush the shell being careful not to crush the egg. Peel and enjoy!

eggs need to be at least 1 week old before they are boiled in order for the shells to peel off easily. the difference is simply for the age of the eggs.

Simple answer.. the easy to peel eggs are older and the hard as heck ones are fresher.

They may not all be the same age. The fresher the egg, the harder it is to peel.

after you remove them from the pot put them in cold water for a few minutes this will help in the peeling process.

I think the more cooled off they are the better they peel. I usually let the eggs sit in a pan of cold water for a couple of minutes to cool, then peel. They usually fall right out of their shells by then.

hands down the easiest way to hard boil an egg then peel it is to boil for 13 min. remove from heat and put into ice cold water for a few min. (stops the cooking process) then crack all the shells put back into cold water for a few more min. then under warm running water peel them.

success rate is not 100% but its sure up there!

As a rule of thumb the age and temperature of the egg is what determines the ease of peeling. However, I have noticed that eggs with a thicker shell are easier to peel than thinner shells - some eggs are both thick and thin shelled (which is why only part of it peels easily) - though, I suppose this can be an age thing too? I have had the best luck with organic brown eggs.

Yeah, it's annoying. End up with crunchy egg salad all the time. I don't recall it ever being so difficult when I was a kid. Must be the genetically modified feed they give those featherless one eyed stunted winged birds nowadays. Fry em or poach em, but don't hard boil em cause they will give ya grief.
