Give me your best 30 minute meal?!

Question:

Give me your best 30 minute meal?

I would like to cook dinner for my girlfriends birthday. Im not much of a cook but I can get the job done. Can you offer me a quick and easy but good meal?

Answers:
Do you like shrimp? Chicken? EASY!

2 pounds LARGE shrimp, uncooked, pull the skin/tails off
1 finely chopped onion
1 cup olive oil
1 tsp sugar
1 tsp cayenne pepper
1/2 tsp salt
1/2 tsp oregano
1 tsp garlic powder
1/4 cup Maple Syrup
1-2 cups of pineapple juice

Marinate in the fridge overnight in a bowl or pan….stir it when you get up in the morning. In all honesty, I double this to make sure the shrimp is covered and I don’t have to worry about tossing, stirring, etc.

Now, you have a few options. You can buy cheap skewers and BBQ these, or you can stir fry over the stove in a skillet. Either way, make a nice tossed salad, corn on the cob or other fresh veggies, grilled or steamed, rice if you do on the stove, and your girlfriend will think she died and went to heaven! You can get frozen shrimp that is already peeled, run under some Luke warm water to defrost, mix up the marinade while you are doing this, and the side takes no time.

I Promise you that this is the BEST BBQ Shrimp recipe I have EVER had, and it works well with chicken as well if you don’t eat shrimp. If you do chicken, cut into small pieces, cook over the stove like a stir fry, and pour over rice with sides.

There is little to no work for exceptional taste!

Good luck!

PS- if you aren't good at making rice, like me, most resteraunts or chinease places will sell you sides of rice cheap, and it tastes just as good!

UM... have you not heard of Rachel RAY?

Spread Cilantro Lime Mayonnaise evenly over toasted buns. Place blackened fish on bottom half of bun, top with mango salsa, and cover with top half of bun.

Cilantro Lime Mayonnaise:
1 cup mayonnaise
1/4 cup freshly chopped cilantro leaves

if you don't have all the blackening ingredients, you can buy blackened seasoning at the store.

mac n cheese

make some chicken stuffing...set aside & preheat oven to 350

boil about 1lb of boneless, skinless chicken breast, until cooked thru

let chicken breast cool & pull apart into bite size peices and put into a casserole dish

pour 1 can of either cream of mushroom or cream of chicken soup over chicken (condensed & do not add water)

top the soup with stuffing and bake for about 20 -25 minutes, watch so the stuffing doesn't get too brown...

get some take out and a good friend will help foot the bill

Spaghetti Carbonara, very good and pasta and wine are always a romantic meal.

Put a box of spaghetti or llinguine on to cook. Cook a package of bacon, reserving some of the bacon grease. Crumble and set aside. Brown a cut up center cut ham slice and set aside. Drain the spaghetti and immediately return to the pot. Add the bacon and ham and a little of the bacon grease for flavor. Add two beaten eggs and 16 ounces of fresh grated parmesean cheese (not the stuff in the can, the bag that you find in the diary section) and stir until fully mixed. Add a couple of tablespoons of worchestershire sauce and salt and pepper to taste. If you want to get more complicated, you can add some garlic to the bacon grease and add a little half and half to the mixture to make it creamier.

As Rachael Ray would say, yummo!

TACO CHICKEN
Saute 1 chopped onion, 1 tsp garlic in 4 tbsp butter. Add 1 can cream of chicken soup, 1 can cream of mushroom soup, 2 cans tomatoes with chilis. Put aside. Cut 3-4 chicken breasts into cubes. Boil til tender. Drain, and add to above mixture. In a 9 X 13 pan, place a layer of crushed tortilla chips, a layer of the chicken mix, a layer of shredded cheese, then repeat the layers. Bake at 350 for about 45 minutes. Serve with a salad.

Pound a couple of chicken breasts thin (put it between 2 layers of plastic wrap first so you don't have it flying all over the place). Brush with olive oil and sprinkle some balsamic vinegar on top, a little bit of salt and cracked pepper.

Cook in a frying pan about 3 minutes each side, or until it's cooked through.

Serve with a baked potato (which you can do in the microwave) and salad or steamed asparagus (or which ever veg you can make and she know she likes).

cut up chicken breast into large cubes. cut one zucchini, one yellow squash, and one red onion into similar size chunks. now you need a few cherry tomatoes, button mushrooms, and pineapple chunks. put all these into a large ziplock bag and add a few tablespoons of olive oil, lime juice, soy sauce, garlic (powder or whatever) black pepper, dijon mustard, any combination of this, or you could keep it real simple and just add italian dressing or some vinegrette. then put it all on skewers and broil in the oven turning once to get crispy on both sides...about 8 minutes per side. have some kind of rice on the side and some white wine...i like fisheye pinot grigio, its like 8 bucks and chicks dig it.

Grilled Salmon and Mango Salsa w/Rum

1 slab salmon
2 tablespoons blackening spice
? teaspoon red pepper
? teaspoon chili pepper
? teaspoon salt
4 tablespoons olive oil

Season salmon with blackening spice, red pepper, chili pepper, and salt
Sprinkle with oil
Place salmon on fish pan
Place in grill and cook for 4 minutes on each side

Mango Salsa:
1 tomato
1 green pepper
1 jalapeno pepper
3 tablespoons cilantro
3 tablespoons Italian parsley
1 white onion
juice of 1 lemon
1 mango peeled
1 pinch salt
2 tablespoons olive oil
1/4 cup Jamaican Rum

Chop and diced ingredients add all to a bowl then mix with hand and serve over Salmon.

You can bake chicken breasts in 8-10 minutes at 500 degrees as long as they are *really* flattened. Makes them really tender, too. I use the boneless/skinless chicken breast strips, as I find them easier to flatten. Two sauces/recipes I put on before baking:

After flattening, dip the chicken strips in flour, then dip in a mix of BBQ sauce, teriyaki sauce, and soy sauce. Bake as shown above.

OR

After flattening, dip them in a mix of spicy mustard and white wine, then roll them in bread crumbs. Bake as shown above.

Don't forget to cut into the centers after baking to make sure there is *NO* pink. Should all be white and tender. If not, continue baking.

Enjoy! :)
