Any Great Supper recipes?

I would like any recipes that your family loves for dinner. These can include casseroles, pastas, salads, soups, etc. Just let me know what's your favorite. (you don't have to give me any "secret" recipes ;) )

CURRY CHICKEN

INGREDIENTS:
1 whole chicken
3 tablespoons olive oil
? cup minced shallots
3 garlic cloves
1 cup carrots
1 tablespoon salt
1 tablespoon pepper
3 ounces curry powder
4 potatoes peeled and sliced
2 large onions
2 cups chicken stock

1. Wash pieces of chicken. Set in a bowl filled with ice and water (an ice bath.)
2. Coat large pot with olive oil over medium heat.
3. Add shallots, garlic and carrots.
4. Remove chicken from ice bath.
5. Season with salt and pepper.
6. Place pieces of chicken into heated pot. Stir.
7. Add curry powder.
8. Add half of the potatoes and onions.
9. Sprinkle with salt and pepper. Stir.
10. Add chicken stock and stir.
11. Add remaining carrots, onions and potatoes.
12. Cover pot. Cook for 35 to 40 minutes on medium heat.

Salad~ sliced tomato,red onion,avocado,mozzarella
w/infused olive oil.
Side~rice w/broccoliand cheese
shell steak grilled, of course marinated w/ Peter Lugers

Dessert~ pound cake w/fresh strawberries, blueberries, and topped whipped cream.

Takes less than a 1/2 hour to prepare, and the salad is so refreshing

When my kids were small, they loved "porcupine meatballs"
Stir in 3/4 cup minute rice to each pound of hamburger meat, roll into 2" balls, and bake in un-diluted tomato soup.Simple, cheap & yummy.

They loved when I made meat sauce and used different noodles than spaghetti--like mostaccioli or rotini. You can also throw all that together, toss in some chopped pepperoni, sliced mushrooms, black olives and a bunch of shredded mozzarella for a "pizza" casserole--never had any leftovers when I made this!

Tacos, meatloaf, shish kabobs, bbq chicken or ribs....
Stuffed pepper soup is good & cheap (google for recipes). Mac & cheese is great with chopped ham, broccoli & more cheese baked in it.
Be creative...you won't create a hit EVERY time, but I think you'll bat well over .500!

I buy a roasted chicken from the deli at my grocers. The first night we eat a couple of slices of the breast meat with potato salad, sliced tomatoes, rolls (buy enough for three meals), and sometimes baked beans. I then remove the leftover chicken from the bone and dice some to put over salad vegetables. I also chop some and mix it with chopped hard cooked eggs, mayo, salt, and pepper. This way my husband and I have three meals from one chicken. I buy whatever chicken they have in the deli-BBQ, lemon pepper, sweet jalapeno, etc.

You can also cook a package of pasta and mix some with balsamic vinegar or mayo, diced cheese, halved grape tomatoes, celery, salt, pepper, and onion (you can add a little olive oil to taste if you'd like). I serve this with rolls and cold cuts. These recipes keep me from having to heat up the kitchen here in the deep south during 90-100 degree weather.

Addictive Sweet Potato Burritos

INGREDIENTS

1 teaspoon vegetable oil
1/3 onion, chopped
1-1/3 cloves garlic, minced
2 cups canned kidney beans, drained
2/3 cup water
1 tablespoon chili powder
3/4 teaspoon ground cumin
1-1/4 teaspoons prepared mustard
1/3 pinch cayenne pepper, or to taste
1 tablespoon soy sauce
1-1/3 cups cooked and mashed sweet potatoes
4 (10 inch) flour tortillas, warmed
2-1/2 ounces shredded Cheddar cheese

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

Heat oil in a medium skillet, and saute onion and garlic until soft. Stir in beans, and mash. Gradually stir in water, and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce.

Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style, and place on a baking sheet.

Bake for 12 minutes in the preheated oven, and serve.
