Question:

What to make for dinner tonight?

I need some recipe ideas. Preferably scallops, grilled, and some sort of veggie/side dish ideas (more grilling recipes preferred). It's a perfect summer day, and is going to be a perfect summer night, and we want to spend as much time as possible outside, grilling, drinking beers, and loving life. Suggestions please!

Scallop Kebobs!

1 lb. Large Scallops
1 Zuchini or Yellow Squash, sliced 1/4 - 1/2" thick
1 Large Onion, bite sized pieces big enough to skewer
1 Large Sweet Pepper, bite sized pcs. big enough to skewer
1 lb. fresh mushrooms, stems removed

Make sure to cut your veggies large enough that your scallops will be off the grates of the grill, they will cook too fast.

Throw all the ingredients in a bowl. Alternately thread ingredients on your skewers.

Heat grill, lightly brush grates with EVOO. Cook skewers over a medium high grill, turning frequently, until the veggies are done, about 12 minutes.

Serve with a nice crusty bread and a perfect sunset.

BBQ hot dogs are my fav.

Make scallop kabobs with your favorite veggies, you could marinade them in italian dressing and then BBQ. Serve with rice, and a salad

i make this for dinner once a month for my family. i do not post recipes i have not tried myself.

Montana Grilled Chicken serves 6

INGREDIENTS

1 (2 to 3 pound) whole chicken, cut into pieces
1/2 cup lemon juice
1/4 cup light Italian-style salad dressing
1 clove garlic, minced

DIRECTIONS

Mix lemon juice, dressing, and garlic thoroughly in a covered container large enough to hold all the chicken.

Wash and pat dry chicken parts. Place in container with marinade, and mix to completely coat. Cover. Place in refrigerator overnight, turning a couple of times to coat. Must marinate for at least 3 hours.

Drain chicken. Grill over medium heat till juices run clear.

Parmesan Roasted Corn on the Cob

INGREDIENTS

1/2 cup and 1 tablespoon and 2 teaspoons mayonnaise
6 ears corn, husk and silk removed
1 cup and 3 tablespoons shredded Parmesan cheese
1 tablespoon and 1/2 teaspoon chili powder
1-1/4 teaspoons salt
1-1/4 teaspoons ground black pepper

DIRECTIONS

Preheat an outdoor grill for medium-high heat and lightly oil grate.
Brush a thin layer of mayonnaise on each ear of corn. Sprinkle the corn with the Parmesan cheese, chili powder, salt, and pepper.

Wrap each ear with aluminum foil and place on the grill.
Grill, turning occasionally, until the kernels begin to brown, about 10 minutes

here's a really good recipe,

ingredients:
1 1/2 cups of rice
4 tyson mesquite grilled chicken breast
3/4 lbs of mixed frozen vegetables
1 stick of butter or margarine
1 large onion
3 cups of water
5 table spoons of soy sauce

ok to start add 1/2 of the stick of butter into a pot to fry the rice, when the rice starts looking kinda clear, cut half of the onion into small pieces and put it into the rice. let it fry until you notice that the rice is going to start turning light brown, then add the 3 cups of water and cover the pot on medium heat. while thats on, place 4-5 pieces of the tyson chicken breast on the microwave for 3 mins or until defrosted. after cut them into medium squares and take out a pan and place on high and add the rest of the butter into the pot and place the chicken into the pan also. by then the water in the rice should be boiling and starting to get soaked up by the rice, turn off heat to the rice and let sit with the lid on it (do not take the lid off). When that you see the chicken is about to turn light brown dice the rest of the onion and place in the pan to fry for a little while or until the onion starts to look clear, when that happens put the 3/4 lbs of vegetables into the pan and pour the soy sauce over the vegetables and cover the pan and let sit on medium heat for 15-20 mins. after you see that 15 mins have passed by check the vegetables and mix the chicken and vegetables and cover for about 2-5 mins. when the vegetables are done, place rice and the chicken and vegetables in a plate or bown and eat up.... its a fast recipe that i like.... i came up with it so i hope you like it.......
