What is teriyaki sauce made out of?!

What is teriyaki sauce made out of?

I went to whole foods yesterday and they had a teriyaki tofu dish and all the ingredients seemed to be vegan, but it did not have a vegan sign. the employee said that the teriyaki sauce has fish in it... does teriyaki have fish in it??? is teriyaki sauce vegan???

The basic ingredients of teriyaki is soy sauce, fresh ginger, and pineapple. I don't think soy sauce has fish, but it may. Make your own using those ingredients and check the content list on the soy sauce.

I didn't find any mention of fish on several sites. To make your own, start with about one cup of soy sauce. Taste it. It is very salty. Fresh ginger cuts the salt taste. Peel a ginger root. Cut 7 or 8 thick slices (about 1/4 inch thick. Lay the slices on your cutting board and pound the slices until they're thin. Add to the soy. Canned Dole pineapple works well. Add some juice until there's a slight sweet taste to the sauce. You could also add a few chunks of the pineapple. The ginger should also have taken care of the salty taste. Add more ginger if it's still salty.

That's your basic teriyaki sauce. You can also add crushed fresh garlic, any herbs you like, diced onion, brown sugar, etc. Let your imagination go. Use it as a marinade, or as a cooking ingredient.

Teriyaki sauce doesn't have fish in it. Perhaps that teriyaki sauce is made where some sort of fish dish is and could contain traces of fish.

Not all vegan products are labeled as such. It would be nice if animal ingredients were required to be labeled though...but usually fish is labeled because it's a top allergen.

It may be that the person that made that teriyaki sauce added some fishsauce as a variation.
