Fun and creative potato's?

I'm always making plain mashed or fried potato's. What are some different ways I can make potato's? I'm thinking something with maybe chedder cheese and bacon?


Answers:
MMMMMMMMMMMMM! I love potatoes and can think of a zillion ways to prepare - but, a summer favorite of my family is:
Ranch Potatoes
Slice your potatoes into chunks (or dice)
place in a large bowl and toss with a little salt (the salt helps draw moisture from the potatoes and they cook faster). Then add enough ranch salad dressing until medium to thick coated
Portion out onto individual sheets of aluminum foil (fold into packets) and BBQ until soft. They taste their best if they have browned a little bit.

I have also done a similar thing to the potatoes, only instead of the ranch dressing - I tossed with olive oil and herbs/spices) packaged and cooked. My son ate his with ketchup. I ate mine with sour cream - my husband loved them just with the herbs. I have even tried olive oil adn a little basalmic vinegar! You could certainly dress these with cheddar cheese and bacon - you could even omit the olive oil and add diced raw bacon to the potatoes and let them cook and flovor together.

Or for another twist on mashed potatoes make your mashed potatoes as you always do - but add shredded cheddar and chopped bacon and mix. Add some sour cream and maybe some chives and you also have a fantastic filling for double baked potatoes!

My husbands ultimate favorite - I tend to make during the winter months (because it is very hearty) is by making garlic mashed potatoes with cheddar cheese and parsley. Place in a casserole pan as a "mashed potato island" then surround the island with cooked stuffing mix (stove top stuffing works great for this). Sprinkle the mixture with shredded cheese and bake until cheese is bubbly.

Boy I could go on and on and on.....

Bacon Bacon Twice Baked Potatoes


Ingredients
4 large baking potatoes
2 Tbsp. Bacon Bacon?
1 tsp. Garlic Garlic?
1/2 tsp. Seasoned Salt
2 cups shredded cheddar cheese
1/4 cup (1/2 stick) softened butter
1/2 cup sour cream
2 chopped green onions
Pepper to taste

Directions
Scrub potatoes; bake until tender. Cut potatoes in half lengthwise and scoop out insides, leaving 1/4-inch shell. Combine insides of potatoes with next 8 ingredients. Mound and press potato mixture into skins. Place on greased baking sheet. Bake at 350° for 15-20 minutes or until cheese melts and potatoes are heated through. Makes 6-8 servings.

Mini New Potato Bites

Prep Time: 20 min
Total Time: 1 hr 20 min
Makes: 15 servings, 2 topped potato halves each

1-1/2 lb. new potatoes (about 15 potatoes)
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
4 slices OSCAR MAYER Bacon, cooked, crumbled
2 Tbsp. snipped fresh chives

PLACE potatoes in large saucepan; add enough water to cover. Bring to boil. Reduce heat to medium-low; cook 15 min. or until potatoes are tender.
MEANWHILE, mix cream cheese, sour cream and Parmesan cheese; cover. Refrigerate until ready to use.
DRAIN potatoes. Cool slightly. Cut potatoes in half; cut small piece from bottom of each potato half so potato lies flat. Place on serving platter. Top each potato half with 1 tsp. of the cream cheese mixture. Sprinkle with bacon and chives.

These potatoes are delicious served hot or cold.

Substitute
Substitute PHILADLEPHIA Chive & Onion Cream Cheese Spread for the regular cream cheese for added flavor.

You can try scalloped potatoes.

cut them up into slices, lay them out in a pyrex baking dish, and pour a sauce over the top, cook at about 375 until the potatoes are cooked through almost.

At the end, i like to add some bread crumbs and put under the broiler for 2 minutes.


For the sauce, I like to use a mornay sauce. You can look that up, but here's my basic technique:

Melt 3 tablespoons of butter in a pan. add 3 tablespoons of flour. cook until it foams out. We've just made a light roux. Then, add in milk slowly.

Cook until it thickens slightly.

Take off heat, add cheese, salt, pepper, etc.

This ones my favorite. Slice potatoes 1/4" thick leaving skins on .Add chopped onion,mushrooms . You can add others like cooked bacon or peppers. A large chunk of butter . Season with lemon pepper. Now make a large foil bag by folding in the edges. Fill bag with mixture and put on grill. Or you can do it in the oven in a cast iron pan.

MEXICAN CHEESE FRIES

4 large baking potatoes
1/2 to 3/4 cup grated Parmesan cheese
Santa Fe seasoning blend
granulated garlic or garlic powder
pepper
olive oil

Cut potatoes into thin wedges. Coat with olive oil. In a large zipper bag, combine cheese, seasoning blend, garlic and pepper. Add potatoes, shake well.
Bake at 400 for 20-25 minutes.

Serve with sour cream and salsa.

Garlic and dill new potatoes:
boil red skin potatoes till tender, drain. Add a pat of butter, some minced garlic and fresh dill

Or try different toppings on baked potatoes like salsa, chili, broccoli and cheese, bacon

Potato/Pasta salad (can be served hot or cold):
Mix cooked potatoes (cut into chunks) with cooked spaghetti and green beans (fresh are best) with pesto and pine nuts
