here's a really good recipe,

ingredients:
1 1/2 cups of rice
4 tyson mesquite grilled chicken breast
3/4 lbs of mixed frozen vegetables
1 stick of butter or margarine
1 large onion
3 cups of water
5 table spoons of soy sauce

ok to start add 1/2 of the stick of butter into a pot to fry the rice, when the rice starts looking kinda clear, cut half of the onion into small pieces and put it into the rice. let it fry until you notice that the rice is going to start turning light brown, then add the 3 cups of water and cover the pot on medium heat. while thats on, place 4-5 pieces of the tyson chicken breast on the microwave for 3 mins or until defrosted. after cut them into medium squares and take out a pan and place on high and add the rest of the butter into the pot and place the chicken into the pan also. by then the water in the rice should be boiling and starting to get soaked up by the rice, turn off heat to the rice and let sit with the lid on it (do not take the lid off). When that you see the chicken is about to turn light brown dice the rest of the onion and place in the pan to fry for a little while or until the onion starts to look clear, when that happens put the 3/4 lbs of vegetables into the pan and pour the soy sauce over the vegetables and cover the pan and let sit on medium heat for 15-20 mins. after you see that 15 mins have passed by check the vegetables and mix the chicken and vegetables and cover for about 2-5 mins. when the vegetables are done, place rice and the chicken and vegetables in a plate or bown and eat up.... its a fast recipe that i like.... i came up with it so i hope you like it.......

Ok, I'm going to give you my secret recipe for chicken strips. Sssshhhhhhhhhhhhh. Don't tell anyone! lol.

Cut the breasts into strips.
Take one box of Garlic and Herb flavored Triscuits and one small can of cashews and blend into fine crumbs in the food processor.
Whisk together eggs and small amount of milk.
Set out next to dish of flour and dish of Triscuit mixture.
Dip chicken strips first in flour, then egg and then into Triscuit mixture. When in mixture, pound the crumbs into the chicken breast. This will flatten the meat and help coating to stick.
Deep fry in preheated 350 degree deep fryer for 2-4 minutes.

I have gotten rave revues from family and friends who are always requesting I make these.

Just buy a can of Campbell's cream of chicken and mushroom soup (both flavors in the same can), add about 1/2 cup milk or water, heat with a little garlic, soy sauce, and/or other spices to taste. Microwave two frozen breasts for two minutes, then use a steak knife to cut them into one-inch cubes. Grill the chicken on a buttered non-stick pan on the stove. Heat about 1/2 cup frozen peas and carrots (or similar veggie mix), and add to the sauce. Make some instant rice in the microwave. Mix the chicken and sauce, then pour over the rice.

Bread chicken breasts in italian bread crumbs and place in a glass cooking dish. Coat top of each breast with melted butter. Cover with tin foil and cook on 475 for 20 minutes. In the meantime, mix 1 can cream of broccoli soup with 3/4 to 1 can milk (should be creamy but not runny so add milk slowly). After 20 minutes remove tin foil and pour cream of broccoli soup mixture on top of chicken. Recover with tin foil and cook on 475 for another 20 minutes. We serve with stove top stuffing or rice and a veggie.

I cook it in a skillet with some crushed garlic and olive oil. Side of pasta or rice.

You can dice it up also, cook through, then I add the al dente pasta right to the skillet and toss, sometimes putting in broccoli and mushrooms.

You can slice it into strips, put in skilled, when pink is gone add some fajita or taco seasoning, I don't like onions or peppers but in this I cut them into BIG chunks while the chicken is cooking to get the flavor and then pick them out. Anyway, you don't need them, but then serve on warm tortillas with some rice and of course, your normal taco toppings.

I also like to cut mine into strips, heating up a skillet of peanut oil, put the strips into a milk/egg bath, then into some seasoned breading and fry in the hot oil. Serve with BBQ sauce

you can cook and make tacos.

chicken katsu (fried chicken) - clean and cut, dip the chicken in flour, you can salt and pepper if you like. then dip in a typical egg wash then in the panko bread crumbs. then fry in a pan
You can get the panko bread crumbs in the international food section at the grocery store.

teriyaki chicken - buy the yoshidas sauce at the grocery store, then after cleaning and cutting chicken then marinate and bake in the sauce. it taste even better bbq if you ask me.

Angie's Sweet & Sassy Chicken


Ingredients
4 thawed boneless, skinless chicken breasts
1 - 2 Tbsp. Seasoned Salt
6 slices cooked bacon
8 oz. can sliced mushrooms
1 Tbsp. butter
1/2 cup Sweet & Sassy Mustard Sauce or as desired
Shredded colby Jack cheese

Directions
Rub chicken with Seasoned Salt, allow to sit for 1 hour; grill until cooked through. Sauté mushrooms with butter. Place chicken in a glass baking dish; top with Sweet & Sassy Mustard Sauce, mushrooms and bacon. Sprinkle with cheese. Bake at 350° until cheese is melted. Makes 4 servings. for more great recipes

Put it in a baking dish with any of the following and bake, covered with foil that you've poked vent holes in, for 1 hour 15 minutes:

Sliced onions, sliced green peppers, sliced fresh mushrooms, a jar of your favorite spaghetti sauce, rinse jar with 1/2 cup red wine and pour over. Bake. Serve with hot pasta.

Fresh baby carrots, a can of cream of mushroom soup, an envelope of dry onion soup mix, 1/2 cup white wine. Bake. Serve with rice or noodles.

Potatoes cut in quarters, chunks of carrots, chunks of celery, a can of Progresso French Onion Soup.

Frozen peas, one can cream of mushroom soup, one can French's onions (like you use for that green bean casserole) Serve with rice or mashed potatoes.

place your fillets in a baking dish slice some onions in rings some capsicum add some crushed garlic cover with tomato soup place in pre heated oven on 180 c until cooked but tender then sprinkle grated tasty cheese over the top of your fillets and place back in oven until golden the soup reduces and thickens a little while cooking the onion and capsicum my kids and husband love it

Another idea and it is tasty and filling is
slice a crevice in your fillets and stuff with whatever you want really bacon cheese herbs sundried tomatos whatever your preference wrap in puff pastry place on a greased or oiled baking tray place in pre heated oven on about 180 c for approx 45 mins or until cooked yum and very filling
great with salads,pasta,scalloped potato e.t.c..

I like to bake or broil it with a little lemon pepper seasoning or fresh lemon juice if I have it, then cut it up and add it to cooked spinach (with a little more seasoning) and rice or noodles (best if you add chicken broth to the water you cook the starch in).

I love to marinate chicken breasts.You can soak them in a marinade sauce use a spice rub and let it marinate that way,the sky's the limit.Try some soy sauce, fresh ginger and garlic or honey ,lemon juice ,salt and pepper.Or fresh cilantro,lime juice a little garlic ..... I love using Curry powder too.
Think about what type of food you like and play around with herbs and spices.

Cut it into chunks like catfish sizes. Dampen the chunks shaking off the excess water. Place a bag of fish fry seasoning into a larger ziplock Baggie and drop in the chicken chunks. Shake well. Then either spray a baking pan with Pam and bake in the oven or fry it in oil depending on how you feel about fat and calories. :) You will think you are having fish! It is really great this way!

You can pound it to 1/4" thin inside of a large Baggie. Mix Stovetop Stuffing with an egg and small amount of water or broth. Remove chicken from Baggie and spread with a layer of the stuffing. Roll like an enchilada and place seam side down in a baking pan. Top with Cream of Chicken or Mushroom soup slightly diluted. Bake till chicken is done.

i have one called chicken mozzarella,you cook the chicken breasts,when done open 1 can campbells tomato soup,do not dilute,spoon over all the chicken breasts,top with grated mozzarella cheese and return to oven until the cheese melts and bubbles,oh my god is it good,i got this recipe off the back if a can of campbells soup

in baking pan add chicken. pour soup over chicken add a little bit of water or milk. add garilc and seasonings. Top chicken with the cheese ( any shredded kind will do). Bake at 400 until chicken is done.

Cheesy Chicken Breast:

4 servings

4 boneless chicken breasts
1/3 cup olive oil
1 garlic clove, minced
1/2 cup breadcrumbs
1/4 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon paprika
1/4 cup parmesan cheese, finely grated
1/3 cup cheddar cheese, finely grated
1 tablespoon parsley, chop

1. In a bowl combine oil and garlic and let set for 15minutes.
2. In a bowl combine breadcrumbs, pepper, salt and paprika. Stir well.
3. Add parmsean cheese, cheddar cheese and parsley to the breadcrumb mixture and stir well to combine.
4. Dip chicken breast into oil to coat on both sides, then dip into crumb mixture coating well on both sides. Place chicken breast on greased baking dish.
5. Repeat with all chicken breast.
6. Drizzle remaining oil over chicken breast.
7. Bake at 400 degrees for 35 minutes.
8. Remove from oven and let rest 5 minutes before serving.

this is my husbands recipe

preheat oven to 350

pour a jar of salsa, (mild, medium, or hot) over the chicken in a pan (lined with aluminum) and throw a few jalapenos on top,,, bake for 1 hour and then he likes to put cheese (provolone or swiss ) on his,,,, really tender chicken this way

BBQ steamed chix. take prepaired skinless boneless chix and place them on freezer paper and freeze them individually .when frozen place on a sheet of HEAVY duty tin foil large enough to wrap the breast [ one breast to a foil ] place balsamic vinegar , light soy sauce , garlic powder, slice of onion, black pepper ,[ hot sauce to taste if preferred ] on the frozen chix ,now fold foil over breast and place on upper rack of pre heated BBQ grill UPPER RACK ONLY .heated to 425 use an oven thermomiter. cook for 12 minutes and turn over then cook for another 12 min then reduce heat to 325 cook an additional 15+ minutes or until internal temp is 170f these basicly self steam and are so delicious and tender.enjoy with a cold drink and a salad on the side.

Easy and great

Pound or slice the breasts to about 1/2 inch thick

mix 2 tbls flour and 1/2 cup Parmisean Cheese in a plastic bag

salt and pepper both sides of chicken and coat with flour cheese mixture

Heat 2 Tbls Butter and 2 Tbls Olive oil in a skillet and cook chicken over med high heat for 3-4 min on each side.

Remove chicken and add 1/2 cup wine (red or white) and 1 cup cherry or grape tomatoes Cook 5 min and serve over chicken

Put all over pasta and serve with garlic bread.

try marinating in italian dressing for a few hrs (or overnight) & then grill them & slice up & add to salad..It's easy, delicious & a great summer dish
