Answers:
30 some years age we called it a stuffed potato but, times change. This is how I do it.

Bake 1 potato for every serving you need.
Let them cool to a point that they can be held in your hand. Shave off the top of the potato end to end (long ways). Scoop out the insides with a teaspoon, leaving a shell of "meat" for stability.
Mash the scooped out portion of potato using butter, sour cream and a generous amount of finely minced onion. Usually 1 whole small onion for 6 potatoes.
Optional: 1 - 2 Tbl. spoon prepared horseradish. (not sauce).
Add in 1/4 C parmesan cheese. Mix well.
Now re-stuff each potato shell, genreously, mounding above the shell.
Sprinkle each potato with shredded sharp cheddar cheese and return to oven, just before serving to reheat.
Remove from oven again after about 10 minutes @ 350, and sprinkle with chives and bacon bits if desired.
Your family and friends will rave. And don't hesitate to put your own spin on them.

Bacon Bacon Twice Baked Potatoes


Ingredients
4 large baking potatoes
2 Tbsp. Bacon Bacon?
1 tsp. Garlic Garlic?
1/2 tsp. Seasoned Salt
2 cups shredded cheddar cheese
1/4 cup (1/2 stick) softened butter
1/2 cup sour cream
2 chopped green onions
Pepper to taste

Directions
Scrub potatoes; bake until tender. Cut potatoes in half lengthwise and scoop out insides, leaving 1/4-inch shell. Combine insides of potatoes with next 8 ingredients. Mound and press potato mixture into skins. Place on greased baking sheet. Bake at 350° for 15-20 minutes or until cheese melts and potatoes are heated through. Makes 6-8 servings.

I just add butter, sour cream, bacon bits, and cheese. Yummmmm.
