Pollo (Chicken with Olives)

Ingredients:
-1 whole chicken
-3 peppers
-3 tomatoes
-3 zucchini
-100 gr. Black Olives
- 1/2 glass olive oil
-salt and pepper

Cut the chicken into 8 pcs & deep fry until golden.
Add sliced pepper & zucchini.
Mix & cook for 45 minutes.
Then add the black olives 5 minutes before cooking end.

manocotti is good, or just normal spagetti with meat balls but with sausage also :)

Chicken Cacciatore
Another of my favorites - a hearty Italian classic. I like it with pasta of course! If tomatoes are not in season, I use a 19 ounce can of tomatoes, drained, in place of fresh tomatoes.

Ingredients:
2 pounds chicken parts
1/4 cup flour
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 green pepper, sliced
1 cup mushrooms, sliced
3 tomatoes, peeled and chopped
1 can (5 1/2 ounces) tomato paste
1/4 cup white wine
1/2 cup chicken stock
1 bay leaf
1 teaspoon basil
Salt and freshly ground pepper



Directions:
Coat chicken parts with flour. Heat oil in a large pan and cook the chicken until golden brown all over - about 10 minutes.


Add the onion, garlic, green pepper and mushrooms and cook for 3 more minutes. Drain excess fat from the pan.


Add the remaining ingredients. Cover and simmer over low heat for 30 to 40 minutes, until the chicken is tender. Remove bay leaf and serve. Makes 4 servings.








Or and antipasto Salad1/2 cup vegetable oil
3 tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon dried basil
1/8 teaspoon crushed red pepper flakes
1 teaspoon salt
6 ounces macaroni
1/4 cup grated Parmesan cheese
2 cups broccoli florets
4 ounces sliced pepperoni sausage
10 cherry tomatoes, halved
1/2 cup shredded mozzarella cheese
DIRECTIONS
Cook pasta in a pot of boiling salted water until al dente. Drain.
In large bowl, stir together oil, vinegar, garlic, basil, and salt and pepper. Toss with warm macaroni to coat well. Toss with Parmesan. Cover, and refrigerate 2 to 3 hours.
Add broccoli, pepperoni, and tomatoes; toss well. Sprinkle with mozzarella cheese, and serve.

with the pizza i would go with the original italian style. The thin crusted pizza that is truly italian! and for the pasta...i would go with bow tie pasta or the pasta that is green, orange, and white. (i forget the name). i would put olive oil on the pasta instead of butter.

I want to try making pesto sauce from basil. (I love to try new things.)

2 cups fresh basil leaves, packed
1/2 cup freshly grated Romano cheese (or Parmesan)
1/2 cup extra virgin olive oil
1/3 cup pine nuts or walnuts
3 medium sized garlic cloves, minced
Salt and freshly ground black pepper to taste

If you are using walnuts and they are not already chopped, pulse them a few times in a food processor. Combine the basil in with the nuts, pulse a few times more. Add the garlic, pulse a few times more. Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated Romano cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.

Makes 1 cup.

Serve with pasta, or over baked potatoes, or spread over toasted baguette slices.

I think I'll use walnuts instead of pinenuts, for cost reasons and maybe leave the garlic out the first time...

Bochaloany, I more than likely spelled it wrong. What it is is a flank steak pounded very flat and covered with Oinons, green peppers, Mozzarella cheese, and breadcrumbs(add Garlic, Bassil, and other spices as you like) roll the cover steak into a roll tube shaped (pin it with tooth pick to hold shape) Fry it till lightly brown on out side. Then throw it into a simmering pot of Tomatoe sauce, let cook for an hour. Boil noddles and pour sauce over noddles. The Bochaloany (meat roll)should cool a little and then be sliced into coins they will have a pinwheel look to them and tast great. Place in a line down the center of the sauce cover noddle is looks wonderful. Think I make one tomorrow.

How about stuffed shells? It is so easy to make and you can make a double batch to freeze for a second meal. Brown ground beef or turkey with minced garlic, when completely browned add a package of frozen spinach that has been cooked and drained. In a separate bowl mix ricotta cheese, shredded mozzarella cheese, parmesan cheese and 3 eggs . Add the cheese mixture to the beef/turkey mixture and season with salt and pepper to taste. Cook one box of large shells and rinse. Stuff the shells with the cheese/meet mixture. Pour some spaghetti sauce in the bottom of a baking dish to prevent the shells from sticking then place the filled shells in the dish and cover with more sauce. Sprinkle the top with more mozzarella and bake for 30 minutes at 325 degrees. Enjoy!

Try a vegetable tart.

Tomato tart is just awesome. Make a buttery dough. Roll it out. Lay parmesan and mozarella on it. Add sliced Roma tomatoes (seeded), minced garlic, and shredded basil. Pour a mixture of eggs and cream over it and bake till set. Tastes almost like a pizza.

Or try an eggplant tart. Again, make the dough. Lay the cheeses. Lay slices of roasted eggplants (just slightly roasted) on top. Embed WHOLE cloves of garlic randomly in the eggplant. Do the same with some sundried tomatoes. Add some basil. Pour the egg mixture over and bake till set.

These recipes are great during the summer, when eggplants and tomatoes are at their peak.

Crab Ravioli in Creamy Tomato Sauce Recipe

1 (6-ounce) can lump crabmeat (recommended: Bumble Bee)
1/2 cup ricotta cheese
1 teaspoon Italian seasoning
1 (12-ounce) package wonton wrappers
1 egg, beaten
1 cup milk
1 (1.3-ounce) package creamy tomato sauce mix (recommended: Knorr)
2 tablespoons butter
Chopped parsley, for garnish

Drain crabmeat, reserving liquid. In a small bowl, combine crabmeat, cheese, and Italian seasoning. Brush a wonton wrapper with the beaten egg. Place about 1/2 teaspoon crab mixture in the center, and fold wrapper diagonally to create a triangle. Press edges to seal. Transfer to a flour-dusted baking sheet. Repeat until all of crab filling has been used; this should make about 32 ravioli.
Bring a large pot of salted water to boil. Meanwhile, in a large saucepan, combine milk and reserved drained crab liquid over medium-high heat. Whisk in sauce, add butter, and bring to a boil. Reduce heat and simmer, stirring frequently, for 3 minutes. Keep sauce warm over low heat while you boil the ravioli. In batches of 8, drop ravioli into boiling water. Cook for 2 minutes, or until ravioli rise to the surface. With a slotted spoon, carefully transfer ravioli to sauce. Repeat until all ravioli are cooked. Divide ravioli equally among 8 plates. Sprinkle with parsley and serve.

Take a baguette and slice it into slices about a quarter inch thick. Lay out on a baking sheet and drizzle with Extra Virgin Olive Oil, sprinkle with salt, pepper and Parmesan cheese. Place in an oven on broil for about 5 minutes, keep checking, it will burn very fast. Top with slices of fresh mozzarella cheese, slices of tomatoes, and fresh basil. It is a very Roman dish, easy and delicious as well.
