there are many varieties of battenburg cake; different flavour combinations (raspberry-orange, chocolate-orange, chocolat-vanilla, raspberry-vanilla, etc). here is a link to an extrememly simple battenburg cake recipe, that requires NO baking: http://www.parsleysoup.co.uk/ and look under "cakes".
i don't know how good it will actually be, but it sounds quite good. i reckon the quality of vanilla/almond cake and chocolate cake you purchase for the recipe will have a huge impact on your "no-bake" battenburg.
here is another link for more information on the battenburg pattern and the cake itself: http://en.wikipedia.org/wiki/battenburg,... it includes a recipe as well.
ok, here's MY recipe:
chocolate-orange battenburg
1/2 c. soft butter
1/2 c. sugar
2 eggs, beaten
few drops pure vanilla extract
1 c. ground almonds
1 c. self-rising flour, sifted
grated zest and juice of 1/2 orange
2 tbs. cocoa powder, sifted
2 - 3 tbs. milk
1 jar chocolate & nut spread (nutella)
corn strach for dusting
8 oz. white almond paste
preheat oven to 350 F. grease and line a 7 in. square cake pan. arrange a double piece of foil across the middle of the pan to divide it into 2 equal rectangles.
cream the butter and sugar in a mixing bowl; beat in eggs, vanilla, and ground almonds. divide the mixture evenly between 2 bowls. fold 1/2 the flour into 1 bowl, then stir in the orange zest and sufficient juice to create a soft consistency. set the orange-flavoured mixture aside. fold the rest of the flour and the cocoa into the remaining mixture in the other bowl with enough milk to create a soft consistency. fill half of the prepared pan with the orange mixture and the second half with the chocolate. flatten the top (of each half) with a wet spoon. bake for 15 minutes. then reduce the heat to 325 F and bake the cake for 20 - 30 more minutes or until the top is 'just' firm. let cool in the pan for a few minutes. turn out the cake onto a board and cut each one into two indentical strips. trim so that they are even. then let cool. using the chocolate-nut spread, sandwich the cakes together, chocolate and orange side by side. then orange and chocolate on top. spread the sides with more of the chocolate-nut spread. on a board lightly dusted with cornstarch, roll out the white almond paste to a rectangle 7 inches wide and long enough to wrap all around the cake. wrap the almond paste carefully around the cake making the seam underneath. press to seal. mark a criss-cross pattern on the almond paste with a knife. then pinch together the corners if desired. store in a cool place cut with a sharp knife into checkered slices to serve.
if you can't find anyplace in the u.s. (it's an english specialty) that sells this, take the recipe to a very good bakery (someplace where they are known for their pastry chefs and international baked goods) and have them make it for you. or, if you are an experienced baker yourself, you could always make it at home.
to see what this cake ought to look like after it's baked, check out this link:
http://www.foodfeatures.net/stock/index....
it's the loaf covered in creamy white, and each slice looks like a checker/chess board. it's the only one i could find that closely resembles the recipe.
i hope this helps! good luck and enjoy!
the store
i couldn't find a store but this website has a recipie so you could cook it yourself as well as order it i believe. hope this helps. never heard of this cake but it looks really good and i'm a big baker so i can't wait to try it! good luck!
