Answers:
Roughly 2 cups I think. It would be best to measure it with a small scale if you have it.

16 oz. + 2 cups or 1 lb. 2 cups = 1 pint, 2 pints = 1 quart (32 oz.), 4 quarts = gallon (64 oz.)

it all depends on how you fabricate the rhubarb. Suppose you chop it into a large dice, that's going to be a larger volume then if you send it through a juicer, right? or if you had minced it, or even cut it small dice. the only things that can be accurately measured by volume are milk, water and eggs, everything else should be measured by weight.
