What should I do with a lot of garlic?

I went to the farmer's market today and bought some very fresh (very smelly) garlic. Anyone got any suggestions on how I should cook it?

You could roast it: Preheat oven to 350°F. Cut top 1/4 inch off heads of garlic to expose cloves. Place garlic in small baking dish. Add oil and sprinkle with salt and pepper; toss to coat. Turn garlic cut side up. Cover tightly with aluminum foil. Bake until garlic skins are golden brown and cloves are tender, about 55 minutes. Cool. Squeeze garlic cloves from skins, and put in a container in the fridge for up to 2 months- use to spread on bread, for flavor in sauce, stews, or casseroles, to perk up homeade or jarred pasta sauce- or just mix with some fresh basil and pine nuts for a great pesto.

no, but if u have any extras, play a prank. go outside a local grocery store saying "selling garlic to ward off vampires. $50 each clove!" hahaha. lol. would be funny. sorry, i kno i'm not helping.

make some homemade garlic bread, make some spaghetti with a garlic alfredo sauce, or with a garlic marinara sauce.

If you can't use it right away , clean it up and freeze it in a sealable container or zip lock. Just remember to use it before it freezer burns (3months+)

feed it to someone to whom you can keep a distance from. Don't cook the flavour out--chop it lots.

Grate it, bag it, freeze it in the freezer. Then when you need some you will have it. Cook it? Look for recipes for fresh garlic online at: www.recipes.com

eat it at night raw with a piece of toast and honey. raw garlic helps prevent heart disease, including atherosclerosis, high cholesterol, high blood pressure, and to improve the immune system.

You can chop them all up and put some oil and keep in container - this will keep it longer. Store in the fridge, next time you need garlic for a recipe, use this.

Roast it, then eat it.

If you want to use it immediately, roasting it in the oven is a good idea. You can then use it to make roasted-garlic mashed potatoes or something similar. I'm not sure if you'd need the entire bulb, though; it would depend on how many people you need to feed!

If you have leftovers, garlic tends to store relatively well. You can always freeze it, or store it in olive oil in the fridge. I do that often.

HI! U can try to cook garlic pickled. Its a Indian recipes actually that taste good with rice.This pickles also can be kept for 3 month in tight jar. U can go to any Indian cookery web to get varieties of recipes of garlics. Hope this will help u. good luck on Ur cooking.

yummmmmmm, make a garlic pizza, or maybe wrap some in foil after cutting the top and drizzling w oil to make a spread for bread. of course a nice pasta saoce would b good. i love garlic in soup, u could put some into a nice garlic n potato soup, or pea soup, chicken n garlic soup is great. chinese garlic chicken is to die for...omg yum!

Ingredients:
40 Cloves Garlic, parboiled and peeled.
6 Chicken Legs/Thighs
2 medium Onions, Coarsely Chopped
2 tablespoons Olive Oil
1 cup Fresh Parsley, Chopped
1 teaspoon Dried Tarragon, Crumbled
1/2 teaspoon Allspice
1/4 teaspoon Cinnamon
Salt & Pepper To Taste
1/4 cup Cognac
1/3 cup Dry White Vermouth

Directions:

Skin Chicken if desired Preheat oven to 375 degrees F. Place all the ingredients in a deep, heavy pot that can be covered. Combine everything very well with your hands. Seal the pot very tightly with foil. Place a cover over the foil. Pot must be very well sealed so that no juices or steam can escape.

Bake for 1 1/2 hours. Do not open the pot during this time. Serve piping hot, with good crusty bread for mopping up the juices and garlic. Open the pot at the table, so that the diners may get the full benefit of the marvelous fragrance that explodes out of the vessel.

Garlic Spaghetti

INGREDIENTS

* 3 tablespoons minced garlic
* 4 tablespoons olive oil
* 1 (8 ounce) can tomato sauce
* 1/4 teaspoon dried oregano
* 8 ounces spaghetti

DIRECTIONS

1. In a sauce pan, heat the oil and add the garlic, cook but do not let garlic brown. Stir in the tomato sauce and oregano. Cover and simmer for about 20 minutes.
2. Wile the sauce is simmering, cook spaghetti as per package directions and drain.
3. Pour sauce over cooked spaghetti and serve.

when i end up with a lot of garlic and dont want to use it all right away, i find a clean jar that holds a quart or so, i buy some really good olive oil and then i fill it with all my cleaned garlic and fill it to the top with olive oil, after about a week its ready to use, you can chop the garlic in foods that call for garlic, i love to use the oil on pizza crust, bruschetta, etc.....it lasts quite a while..........
