this is simple, Take juices in Ghada, cover it with cloth & tie it,keep it for 4 to 5 months on ur terrace or any open place. (The fermentation beigns in it) after that strain it. & enjoy it

This can't be done. Vinegar is composed of acetic acid, sugar cane juice has glucose and fructose. The formula of acetic acid is C2H5OH and glucose is C6H12O6. You can;t make an acid from a sugar like this.

I am not familiar with making sirka out of sugar cane juice - but this is how you make it out of fresh palm juice, and the method is probably the same.

Place your juice in a (preferably earthenware) container, similar to those used for achar - then heat a piece of earthenware to red hot, and drop it into the palm juice. Close loosely, and let ferment 6 months.

After the fermentation is over, it will become excellent sirka.

*The process is too cumbersome to be adapted at home ;
its best done commercially only !!!!!!!!!
