Makes 24

Ingredients
175g butter, at room temperature
125ml (1/2 cup) maple-flavoured syrup
80g (1/3 cup) caster sugar
2 lemons, rind finely grated
3 eggs
150g (1 cup) plain flour, sifted
150g walnut pieces, roughly chopped
200g pitted dried dates, halved lengthways
2 tbs icing sugar mixture
1/2 tsp ground cinnamon
Method
Preheat oven to 180°C. Line a 25 x 30cm Swiss roll pan with non-stick baking paper.
Use electric beaters to beat the butter, maple-flavoured syrup, sugar and lemon rind in a medium bowl until smooth. Add the eggs 1 at a time, beating after each addition until the mixture is well combined. Add the flour and beat, scraping down the side of the bowl often, until just combined.
Use a wooden spoon to stir the walnuts and dates into the butter mixture. Spoon the mixture into the lined pan and use the back of a spatula to smooth the surface. Bake in preheated oven for 30-35 minutes or until golden and a skewer inserted in the centre of the slice comes out clean.
Remove from the oven and set aside for 10 minutes to cool slightly before turning onto a wire rack. Remove the baking paper and carefully turn right-way up. Set aside to cool.
Just before serving, combine the icing sugar mixture and cinnamon in a small bowl and sift over the slice. Use a serrated knife to cut the slice into pieces
