Out of this World Roasted Red Potato Salad

Ingredients:
5 lbs small red potatoes
1 can small pitted black olives, drained
1 small red onion, coarse chopped
1 bottle peppercorn ranch dressing
1 jar roasted red peppers, filleted and drained and coarsely-chopped
salt
pepper
garlic powder
olive oil

Prep:
Wash potatoes well and slice into uniform pieces, if potatoes are very small, quartering will work.
Place all potato pieces in a large bowl.
Coat with oil and spices.
Spread coated potatoes on a cookie sheet and roast until lightly browned.
(this usually takes 4 or 5 cookie sheets to make this large a batch) Remove roasted potatoes to collander to drain excess oil.
While potatoes are roasting, prepare the remaining ingredients.
Drain rep pepper fillets, and slice lengthwise into quarters.
Cut quartered fillets on the diagonal into quarters again.
Set aside.
Cut red onion into thick slices and chop very coarsely.
Onion pieces should be 1/2-3/4 inch to add color as much as flavor.
Drain black olives well.
Place drained potatoes into a large bowl.
Add the diced and drained vegetables.
Starting with one cup of Peppercorn Ranch dressing (you can substitute your favorite flavor of Ranch dressing), mix the dressing into the potato/vegetable mixture until well coated.
Depending on how much dressing you like, you may add as much or as little as needed.
Mix well, chill 2 hours, and serve.

I saw her make this on Food Network and it looked SO good!

2 tablespoons sliced green olives with pimento
2 teaspoons capers
1 rib celery, finely chopped
1/4 cup finely chopped red onion
3 tablespoons mayonnaise
1 teaspoon apple cider vinegar
1 teaspoon lemon herb seasoning (recommended: McCormick)
2 tablespoons freshly chopped parsley leaves
3 hard boiled eggs, chopped
1 (16-ounce) bag pre-cooked and diced red potatoes (recommended: Reser's)

Combine all ingredients in a large bowl. Stir to combine

New Red Potato Salad

18 small new red potatoes
1 cup minced onions
2 cups mayonnaise (or salad dressing)
1/2 cup sour cream
1/4 cup sugar
1/4 cup cider vinegar
2 teaspoons prepared mustard
1 teaspoon salt
1 teaspoon celery seeds

Bring a large pot of water to a boil.
Drop in the new potatoes and reduce to low.
Cover and cook for 20 min, or until potatoes are done.
Dice potatoes into a lg bowl (I don't peel them).
Add onion.
Mix all remaining ingredients in sm bowl.
Pour over the potatoes and mix well.
Best if refrigerated for 1-2 hours.

red potatoes cut into fours boil till done .let cool!
cut into bite size pieces remove some of the skin
a little miracle whip and stone ground mustard (taste as you add)pepper bacon cut into small pieces(cooked) mini pickles cut into slices red bell pepper cooked and diced

I like to blend my onion and celery in a blender with a little pickle juice until smooth. (pickle juice is great instead of vinegar, it's mostly vinegar w/ more flavor) But for a little crunch w/o the strongness of onion add diced dill pickles to the salad.

German Potato Salad

Ingredients
1/2 cup Vidalia? Onion Dressing
3 Tbsp. Bacon Bacon?
2 lbs. new red potatoes

Directions
Combine Vidalia? Onion Dressing and Bacon Bacon? in medium bowl. Cook potatoes in boiling water until tender. Drain; rinse in cool water. When cool enough to handle, peel potatoes; add to dressing. Toss to combine. Serve immediately for warm salad, or refrigerate for cold German potato salad. Makes 4-6 servings.

Dilled Sour Cream Salmon Potato Salad

8 small new potatoes, cooked & cubed
1 small salmon fillet, poached, cooled and flaked
1/2 pint sour cream
3-4 tablespoons mayonnaise
1 tablespoon vinegar
1 tablespoon dried dill weed
salt & pepper

Boil potatoes & cool. (do not peel).
Dice oi a 1" dice.
Put potatoes in bowl.
Mix all remaining ingredients except salmon .
Coat potatoes with dressing.
Gently fold in salmon. Refrigerate.
